Ingredients
4 boneless, skinless chicken breasts
1 packet ranch seasoning mix
1 cup chicken broth
1 cup shredded cheddar cheese
2 cups baby potatoes, halved
1 cup corn, fresh, frozen, or canned
Instructions
Place the chicken breasts in the bottom of your crockpot.
Sprinkle the ranch seasoning evenly over the chicken.
Pour the chicken broth around the chicken, then add the baby potatoes and corn on top.
Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender and cooked through.
During the last 30 minutes of cooking, stir in the shredded cheddar cheese and let it melt into the sauce.
Serve warm and enjoy a creamy, cheesy, ranch-loaded dinner everyone will love.
Pro Tips
Add the cheese near the end of cooking so it melts smoothly and doesn’t turn grainy.
For even more flavor, try using a mix of cheddar and mozzarella, or add a little garlic powder with the ranch seasoning.
You can swap the chicken for turkey or add extra veggies like carrots, green beans, or broccoli.
