Looking for help!
Tried smoking ribs for first time yesterday. Tried the 3-2-1 method and the came out a bit dry for our liking. Any tips for a bit more tender rib, closer to fall of the bone (family preference).
I used a Traeger pellet grill 225 degrees the whole time. Wrapped in foil after 3 hours with brown sugar and butter. I did not spritz at all. I live in Canada and it was about 5 degrees out (celcius), not sure if that matters.
Photo is after the initial 3 hours before wrapping. Didn't get an end product pic, too hungry.
Any help would be appreciated.

Tri tip smoked to 120 then seared. If anybody wants it well done we politely yet firmly ask them to leave.
