🧀 Stuffed Pasta Shells
Ingredients:

20 jumbo pasta shells

1 lb ground beef (or Italian sausage)

1 cup ricotta cheese

1 cup shredded mozzarella

1/2 cup grated Parmesan

2 cups marinara sauce

1 egg (beaten)

2 cloves garlic (minced)

1 tsp Italian seasoning

Salt & pepper to taste

Instructions:

Cook Pasta – Boil shells until al dente, drain, and set aside.

Prepare Filling – In a skillet, cook ground beef with garlic, salt, pepper, and Italian seasoning. Remove from heat and mix with ricotta, 1/2 cup mozzarella, Parmesan, and egg.

Stuff Shells – Fill each pasta shell with the beef-cheese mixture and place in a baking dish.

Bake – Pour marinara sauce over shells, sprinkle with remaining mozzarella, and bake at 375°F (190°C) for 25 minutes until bubbly and golden.

Ingredients:

1 lb ground pork (or beef/turkey)

1 tbsp sesame oil

1 onion (chopped)

3 cloves garlic (minced)

1 small head green cabbage (shredded)

2 carrots (julienned)

1/4 cup soy sauce (or coconut aminos)

1 tbsp rice vinegar

1 tbsp ginger (fresh, grated)

2 green onions (sliced)

Optional: sriracha or chili flakes for spice

Instructions:

Cook Meat – Heat sesame oil in a skillet. Brown ground pork until fully cooked.

Add Aromatics – Stir in onion, garlic, and ginger. Cook until fragrant.

Add Veggies – Toss in cabbage and carrots. Stir-fry until just tender.

Finish & Serve – Stir in soy sauce, rice vinegar, and green onions. Serve hot, topped with sriracha if desired.

Hearty Sweet Potato Black Bean Chili – Cozy, Flavorful, and Totally Satisfying

Ingredients:

1–2 tablespoons olive oil
1 medium onion, diced small
2 garlic cloves, minced
1 large sweet potato, peeled and diced
2 tablespoons mild chili powder
2 teaspoons cumin
2 teaspoons smoked paprika
1 teaspoon salt
28 ounces diced tomatoes (with juices or fire-roasted)
(2) 15-ounce cans black beans, drained and rinsed
2 cups water

Instructions:

1. Heat olive oil in a large pot over medium heat.

2. Add the diced onion and sauté for 3–4 minutes until softened.

3. Stir in garlic, sweet potato, chili powder, cumin, smoked paprika, and salt. Cook for another 5 minutes, stirring occasionally.

4. Add the diced tomatoes, black beans, and water. Stir well to combine.

5. Bring to a boil, then reduce the heat and let it simmer uncovered for 25–30 minutes, stirring occasionally, until the sweet potatoes are tender and the chili has thickened.

6. Taste and adjust seasoning as needed.

Ingredients:

For Dough:

2 cups all-purpose flour

3/4 cup warm water

For Filling:

1 lb ground pork (or chicken)

1 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp ginger (minced)

2 cloves garlic (minced)

2 green onions (finely chopped)

1 tsp sugar

Salt & pepper to taste

For Soup Gelatin:

2 cups chicken broth

2 tbsp unflavored gelatin

For Serving:

Chili oil, sesame seeds, chopped scallions

Instructions:

1. Make Soup Gelatin – Warm broth, whisk in gelatin, and pour into a dish. Chill until firm, then cut into cubes.

2. Prepare Dough – Mix flour and water into a smooth dough. Rest 30 min, then roll into small wrappers.

3. Assemble Dumplings – Mix pork with soy, sesame oil, ginger, garlic, green onion, sugar, salt & pepper. Add chilled broth cubes. Place filling into wrappers, pleat edges, and pinch closed.

🧑‍🍳 Spicy Beef Stir-Fry
Ingredients:

500g beef (flank steak or sirloin, thinly sliced)

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp cornstarch

2 tbsp vegetable oil

3 cloves garlic, minced

1-inch ginger, grated

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2–3 red chilies (sliced, adjust to taste)

2 green onions, chopped

1 tsp sesame oil

Sesame seeds (for garnish)

Instructions:

Marinate Beef
In a bowl, mix beef slices with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Let sit for 15 minutes.

Stir-Fry Beef
Heat oil in a wok, stir-fry beef until browned. Remove and set aside.

Cook Veggies & Sauce
In the same wok, sauté garlic, ginger, and chilies. Add bell peppers, stir-fry for 2–3 minutes. Return beef, pour in remaining sauce, and toss well.

2 large eggplants (sliced into ½-inch rounds)

2 cups marinara sauce

2 cups shredded mozzarella cheese

2 eggs (beaten)

Instructions:

Prep Eggplant – Slice, salt, and let sit to remove moisture. Pat dry.

Coat & Fry – Dredge slices in flour, dip in egg, coat with breadcrumbs, and fry until golden.

🧑‍🍳 Cheesy Ham Bread Bowl Dip
Ingredients:

1 large round loaf of bread (sourdough or artisan)

2 cups shredded mozzarella (or Swiss/Gruyère)

1 cup cooked ham, shredded or diced

1 small onion, finely chopped (optional)

1 cup cream cheese

1/2 cup sour cream

1/2 cup mayonnaise

1 tsp garlic powder

1/2 tsp black pepper

2 tbsp fresh parsley, chopped

Instructions:

Prepare Bread Bowl
Cut the top off the bread loaf and hollow out the inside to make room for the filling. Save bread pieces for dipping.

Make Cheesy Filling
In a bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, black pepper, onion (if using), and 1 1/2 cups shredded cheese. Stir in ham.

Fill & Top
Spoon mixture into the hollowed bread bowl. Sprinkle remaining cheese on top.

Bake
Bake at 350°F (175°C) for 20–25 minutes until hot, bubbly, and golden on top. Garnish with parsley. Serve with bread chunks, crackers, or veggies.

Ingredients:

1 ½ lbs beef stew meat (cubed)

2 tbsp olive oil

1 onion (chopped)

3 cloves garlic (minced)

4 cups beef broth

2 cups water

2 cups potatoes (cubed)

2 carrots (sliced)

2 cups green beans (trimmed, cut into pieces)

1 can (14 oz) diced tomatoes

1 tsp dried thyme

1 tsp dried parsley

2 bay leaves

Salt & black pepper to taste

Instructions:

1. Brown Beef – In a large pot, heat olive oil. Brown beef cubes on all sides, remove and set aside.

2. Sauté Base – Add onion and garlic to the pot. Cook until softened and fragrant.

3. Simmer Soup – Add beef back in with broth, water, tomatoes, thyme, parsley, bay leaves, salt & pepper. Simmer for 1–1.5 hours until beef is tender.

4. Add Veggies – Stir in potatoes, carrots, and green beans. Cook another 25–30 minutes until veggies are tender. Remove bay leaves before serving.

6 slices bacon (chopped)

1/2 cup red onion (chopped)

1/3 cup apple cider vinegar

2 tbsp Dijon mustard

1 tbsp sugar

Italian Meatballs in Rich Tomato Sauce 🍝Ingredients:

1 lb ground beef
½ lb ground pork
1 cup breadcrumbs
½ cup grated Parmesan cheese
¼ cup fresh parsley, chopped
2 cloves garlic, minced
1 large egg
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional)
2 cups marinara sauce
Olive oil for frying

Instructions:

1. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, parsley, garlic, egg, oregano, salt, black pepper, and red pepper flakes. Mix well but don’t overwork the meat.

2. Roll the mixture into 1–1.5 inch meatballs.

3. Heat olive oil in a skillet over medium heat. Add meatballs in batches and sear for 5–7 minutes, turning occasionally, until browned.

4. Transfer browned meatballs to a plate and drain excess oil from the skillet.

Ingredients:

4–5 medium potatoes (cubed, skin on or peeled)

12–14 oz smoked sausage or kielbasa (sliced into rounds)

1 medium onion (optional, diced)

2–3 cloves garlic (minced)

2 tbsp olive oil

1 tsp paprika

1 tsp Italian seasoning (or oregano/thyme mix)

1 cup shredded mozzarella or cheddar cheese

Salt & black pepper to taste

Fresh parsley (for garnish)

Instructions:

Prep Ingredients
Wash and cube potatoes. Slice sausage into rounds. Mince garlic.

Season & Mix
In a large bowl, combine potatoes, sausage, garlic, olive oil, paprika, Italian seasoning, salt, and pepper. Toss until everything is well coated.

Bake
Spread mixture in a greased baking dish. Bake at 400°F (200°C) for about 35–40 minutes, stirring halfway, until potatoes are golden and tender.
