It’s already on the smoker now… and this thing is an absolute MONSTER! 😂

My daughter raised it for 4H, so I definitely don’t want to mess this one up. Any advice is appreciated! 🙌🔥

Smoked some chicken thighs today and everything turned out pretty good except the skin — it was super chewy and rubbery....

Smoked some chicken thighs today and everything turned out pretty good except the skin — it was super chewy and rubbery. 🍗🔥

I smoked them at 250°F for 2 hours, added BBQ sauce, then let them smoke for another hour. Pulled them off and rested them for about 15 minutes before eating.

What should I change next time to get that skin nice and crispy? 🤔🔥 Any tips are appreciated!

First time smoking a brisket — freedom’s choice! 🇺🇸🥩🔥

Throwing it on tonight at 2100. Started at 17.9 lb untrimmed and ended up at 13.2 lb after trimming. Pretty happy with the trim for my first go.

Dry-brined overnight in the fridge with Holy Gospel and smoking it on a Weber Searwood 600 XL.

Plan is:
🔥 225°F until the bark is set
🥩 Wrap in butcher paper with tallow
🌡️ Bump it to 250°F until probe tender
👀 Start checking around 190°F internal

For the rest/hold, I’m planning at least 4 hours in an insulated meat bag, wrapped in a towel and placed in a cooler. I’ve also read that I should let the brisket cool down to around 175–185°F before starting the hold.

A few questions for the brisket veterans:

Do I need a water pan?

Fat side up or fat side down — what wins and why?

Does anything about my plan sound wrong or need changing?

Any tips, tricks, criticism, or things I should watch out for are welcome. First brisket, so I’m all ears! 🥩🔥🤞

First time trying Party Ribs, and they were a hit! 🍖🔥 Just about a 3-hour cook, and the wife and kids loved them. 🙌

Sliced the ribs individually and seasoned them with my favorite rub. Smoked at 250°F for almost 2 hours, flipping halfway through and spritzing with apple juice every 30 minutes. 🍎💨 Then into a pan with honey, butter, and brown sugar, covered tightly with foil for another 45 minutes. 🍯🧈 Finished uncovered for 15–20 minutes after tossing them in all that goodness. 🤤🔥 Definitely making these again!

Chicken wings on the smoker are hard to beat! 🍗💨 I cook mine at 225°F for about 3½ hours, give or take, and they come out super juicy with a nice little crunch on the outside. 🤤 You could definitely go hotter for a shorter cook, but this method has worked great for me. I’ve made them several times and sometimes use a couple different rubs for every dozen just to mix things up! 🌶️🔥
