🧄🧀 Garlic Parmesan Chicken and Potatoes
(Easy One-Pan Dinner)
🛒 Ingredients
4 chicken breasts or thighs
1½ lbs baby potatoes, halved
3 tbsp olive oil
4–5 garlic cloves, minced
1 tsp Italian seasoning
1 tsp paprika (optional)
Salt & black pepper, to taste
¾ cup grated Parmesan cheese
2 tbsp butter, melted (optional, for richness)
Fresh parsley, chopped (for garnish)
🔪 Instructions
Preheat oven to 400°F (200°C). Line a large sheet pan with parchment or foil.
Season the chicken:
In a bowl, mix olive oil, garlic, Italian seasoning, paprika, salt, and pepper. Rub evenly over the chicken.
Prepare potatoes:
Toss potatoes with olive oil, salt, pepper, and half of the Parmesan cheese.
Assemble:
Spread potatoes on the pan. Place chicken on top or beside them.
Roast (Round 1):
Bake uncovered for 25 minutes.
Add Parmesan:
Remove pan, sprinkle remaining Parmesan over chicken and potatoes. Drizzle with melted butter if using.
Roast (Round 2):
Return to oven for 15–20 minutes, until chicken is golden and reaches 165°F (74°C) and potatoes are crispy.
Finish & serve:
Garnish with fresh parsley and serve hot.

Broil for 3–4 minutes at the end for extra crispiness
