French Onion Ground Beef and Rice Casserole
Ingredients:
1 pound ground beef
1 cup long-grain white rice (uncooked)
1 can (10.5 oz) French onion soup
1 can (14.5 oz) diced tomatoes, undrained
1 cup beef broth
1 medium onion, sliced
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Cook the Ground Beef:
In a large skillet over medium heat, cook the ground beef until browned and no longer pink.
Drain excess grease, if needed.
Sauté the Onion:
Add the sliced onion to the skillet and cook until softened and lightly caramelized (about 5–7 minutes).
Combine Ingredients:
In a large mixing bowl or directly in a 9x13-inch baking dish, combine:
Cooked ground beef and onions
Uncooked rice
French onion soup
Diced tomatoes (with juice)
Beef broth
Mix & Bake:
Stir everything together well in the baking dish.
Cover tightly with aluminum foil.
Bake:
Bake for 60–70 minutes, or until the rice is tender and the liquid is absorbed.
Optional: remove the foil for the last 10 minutes for a slightly crispy top.
Serve:
Let sit for 5 minutes before serving.
Great with a sprinkle of shredded cheese or fresh parsley on top!
