Oven-Baked 4-Ingredient Irish Nachos
Crispy, cheesy, and loaded with bacon—these Irish nachos are the ultimate easy snack or side! Just four ingredients, one pan, and under 35 minutes from oven to table.

Ingredients:
2 pounds russet potatoes, thinly sliced (leave skins on)
8 ounces sharp cheddar cheese, shredded
6 slices thick-cut bacon, cooked and crumbled
3 green onions, thinly sliced
Directions:
Preheat oven to 425°F (220°C) and line a large rimmed baking sheet with foil.
Slice potatoes 1/8–1/4 inch thick, keeping slices even. Spread in a single, slightly overlapping layer on the baking sheet.
Bake 20–25 minutes, flipping once halfway, until edges are golden and centers are tender.
Cook bacon in a skillet until crisp, drain, and crumble. Shred cheese and slice green onions.
Remove potatoes from oven, nudge slices closer together to create a chip layer. Sprinkle cheese evenly, then scatter bacon on top.
Return to oven for 5–8 minutes until cheese melts and bacon sizzles.
Remove from oven and sprinkle green onions over the top. Let cool a few minutes, then serve directly from the pan.
Tips & Variations:
For extra crispness, toss potato slices with 1–2 tbsp neutral oil and a pinch of salt & pepper before baking.
Mix cheddar with Monterey Jack or use spicy cheddar for heat.
Add cooked corned beef for a pub-style twist.
Serve with plain Greek yogurt for a lighter dip.
Baking for a crowd? Use two pans and rotate halfway.
