Savory Garlic Butter Beef Medallions

Ingredients:
1 lb thin-sliced beef round steak
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Start by seasoning both sides of the thin-sliced
beef round steak with salt and pepper.
In a skillet over medium heat, melt 2 tablespoons
of butter. Add minced garlic, dried thyme, and dried
rosemary. Sauté until fragrant, about 1-2 minutes.
Place the seasoned beef medallions into the
skillet. Cook for 2-3 minutes per side for
medium-rare, or adjust cooking time based on your
desired level of doneness.
Once cooked to your liking, remove the beef
medallions from the skillet and set aside
In the same skillet, add the remaining 2
tablespoons of butter. Allow it to melt and
combine with the flavorful garlic and herb mixture.
Return the beef medallions to the skillet, coating
them with the garlic herb butter. Cook for an
additional minute to infuse the flavors.
Garnish with fresh parsley before serving

Traditional German Sauerbraten with Red Cabbage
and Potatoes

Ingredients:
3-4 pounds beef roast (rump or bottom round)
2 cups red wine vinegar
2 cups water
1 large onion, sliced
2 carrots, sliced
2 celery stalks, sliced
10 whole black peppercorns
4 whole cloves
2 bay leaves
1 tablespoon sugar
1/4 cup raisins (optional)
1/4 cup gingersnap cookies, crumbled
Salt and pepper to taste

Directions:
In a large pot, combine red wine vinegar, water,
onion, carrots, celery, peppercorns, cloves, bay
leaves, and sugar. Bring to a boil, then remove
from heat and let cool to room temperature.
Place the beef roast in a large, non-reactive bowl
or container. Pour the marinade over the roast,
ensuring it is fully submerged. Cover and
refrigerate for 3-5 days, turning the meat daily.
After marinating, remove the roast from the
marinade and pat dry. Strain the marinade,
reserving the liquid and discarding the solids.
In a large Dutch oven, heat some oil over
medium-high heat. Brown the roast on all sides,
then remove from the pot and set aside.
Pour the reserved marinade into the Dutch oven
and bring to a simmer. Return the roast to the pot
cover, and simmer over low heat for 2-3 hours, or
until the meat is tender.
Remove the roast from the pot and keep warm
Strain the cooking liquid and return it to the pot.
Stir in the gingersnap crumbs and raisins, if using,
and cook until the sauce has thickened, about 10
minutes.
Season the sauce with salt and pepper to taste
Slice the roast and serve with the sauce.

Southern Style Oven-Baked Beef Ribs

Ingredients:
2 Ibs beef ribs
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 teaspoon black pepper
1 teaspoon salt
1 cup barbecue sauce

Directions:
Preheat oven to 300°F (150°C).
Combine garlic powder, onion powder, smoked
paprika, salt, and pepper in a bowl.
Rub the spice mixture all over the ribs evenly
Place ribs in a baking dish, and cover tightly with
aluminum foil.
Bake in the preheated oven for about 2.5 to 3
hours or until the meat is tender and falls off the
bone.
Remove the foil, brush the ribs with barbecue
sauce, and bake for an additional 30 minutes
uncovered, to caramelize the sauce

Roasted Herb-Crusted Beef Tenderloin with Herb
Infused Jus

Recipe
Ingredients:
1 whole beef tenderloin (approx. 4 lbs)
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
Salt and freshly ground black pepper to taste
1/2 cup beef broth
2 tbsp butter

Directions:
Preheat your oven to 400°F (200°C)
Rub the beef tenderloin with olive oil, garlic
rosemary, thyme, salt, and pepper. Let it marinate
for 15 minutes at room temperature
Place the tenderloin in a roasting pan and roast in
the oven for 25-30 minutes for medium-rare, or
until it reaches your desired level of doneness.
Remove the tenderloin from the oven and let it rest
for 10 minutes.
Meanwhile, pour the beef broth into the roasting
pan and place over medium heat. Scrape the pan
to loosen any browned bits and reduce the sauce
by half.
Whisk in the butter until the sauce is glossy and
slightly thickened.
Slice the tenderloin and serve with the
herb-infused jus.

Ingredients:
2 lbs ground beef
1 large onion, chopped
2 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cans (15 oz each) kidney beans, drained and
rinsed
2 cans (14.5 oz each) diced tomatoes
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon smoked paprika
2 cups beef broth
Sour cream, shredded cheese, and chopped green
onions, for garnish

Directions:
In a skillet over medium heat, brown the ground
beef with the onion and garlic until the beef is no
longer pink. Drain excess fat.
Transfer the beef mixture to a slow cooker. Add
the chopped bell peppers, kidney beans, diced
tomatoes, chili powder, cumin, salt, pepper, and
smoked paprika
Pour in the beef broth and stir to combine.
Cover and cook on low for 8 hours or on high for 4
hours.
Serve hot, garnished with sour cream, shredded
cheese, and green onions.

1 (15 oz) can diced tomatoes
1 (15 oz) can kidney beans, drained and rinsed
1 cup beef broth
Salt and pepper to taste
Chopped fresh cilantro, for garnish
Shredded cheddar cheese, for serving

Directions:
In a large pot, brown the ground beef over medium
heat until fully cooked. Drain any excess fat
Add the chopped onion and minced garlic to the
pot with the beef, and sauté until the onions are
translucent.
Stir in the chili powder, cumin, and smoked
paprika, cooking for another minute until fragrant.
Mix in the diced tomatoes, kidney beans, and beef
broth. Bring to a simmer
Reduce the heat and let the chili simmer gently for
about 30 minutes to blend the flavors, stirring
occasionally.
Season with salt and pepper to taste. Serve hot,
garnished with cilantro and shredded cheddar
cheese.

Ultimate Spicy Beef and Cheese Crunchwrap

Ingredients:
6 large flour tortillas
1 pound ground beef
1 package taco seasoning
1 cup nacho cheese sauce
6 tostada shells
1 cup sour cream
2 cups shredded lettuce
1 cup diced tomatoes
1 cup shredded cheddar cheese
1/2 cup diced onions
Cooking oil for frying

Directions:
In a skillet, brown the ground beef over medium
heat until fully cooked. Drain excess fat and add
taco seasoning along with the amount of water
recommended on the package. Simmer for 5
minutes.
Warm each flour tortilla in a microwave for about
10 seconds to make them pliable. Place about 2
tablespoons of nacho cheese sauce in the center
of each tortilla.
Add a spoonful of the seasoned beef over the
cheese. Top the beef with a tostada shell,
spreading a thin layer of sour cream on it. Then,
add lettuce, tomatoes, onions, and shredded
cheese.
Carefully fold the edges of the tortilla toward the
center, creating a flat-bottomed hexagon. Repeat
this with all tortillas.
Heat a small amount of oil in a skillet over medium
heat. Place the crunchwrap seam-side down and
fry until golden brown, about 2-3 minutes per side.
Serve hot.

Cajun Butter Steak Bites

Ingredients:
1 1/2 pounds sirloin steak, cut into 1-inch cubes
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon freshly chopped parsley
Juice of half a lemon
Directions:
In a small bowl, mix together garlic powder, onion
powder, smoked paprika, cayenne pepper, salt, and
black pepper:
Toss the steak cubes in the spice mixture until
evenly coated.
Heat olive oil in a large skillet over medium-high
heat.
Add the steak cubes to the skillet in a single layer.
Sear for about 2-3 minutes on each side until a
crust forms.
Lower the heat to medium, add butter and garlic to
the skillet. Cook while stirring frequently, until the
garlic is fragrant and the steak is coated in the
melted butter, about 1-2 minutes.
Remove from heat, sprinkle with chopped parsley
and drizzle with lemon juice.

Musakhan Chicken Rolls
Levantine Spiced Chicken and Sumac Rolls

Recipe
Ingredients:
6 large tortillas or flatbreads
2 lbs chicken thighs, boneless and skinless
2 onions, thinly sliced
1/4 cup olive oil
3 tablespoons sumac
2 teaspoons ground allspice
1teaspoon ground cinnamon
1/4 cup pine nuts, toasted
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Directions:
Preheat your oven to 375°F (190°C).
In a bowl, mix the chicken thighs with sumac
allspice, cinnamon, salt, and pepper.
Heat olive oil in a skillet over medium heat and
sauté the onions until caramelized, about 10-12
minutes.
Add the seasoned chicken to the skillet and cook
until fully done, about 8-10 minutes each side.
Once cooked, shred the chicken in the skillet and
mix with the caramelized onions.
Lay out the tortillas, and evenly distribute the
chicken and onion mixture onto each. Sprinkle
toasted pine nuts and chopped parsley on top.
Roll up the tortillas tightly and place them seam
side down on a baking sheet.
Bake in the oven for about 10 minutes or until the
rolls are crispy and golden.
Serve warm with a side of tahini sauce.
