Cabbage soup is a classic comfort food known for its simplicity and nourishing qualities. It's a warm and hearty dish that's perfect for chilly days or whenever you need a wholesome meal.
🛒 Ingredients:
1 medium-sized cabbage, chopped
2 carrots, peeled and diced
2 celery stalks, diced
1 onion, chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
8 cups vegetable or chicken broth
1 bay leaf
1 teaspoon dried thyme
Salt and black pepper to taste
Olive oil for sautéing
🔪 Instructions:
In a large pot, heat a drizzle of olive oil over medium heat.
Add the chopped onion and minced garlic. Sauté for a few minutes until they become fragrant and translucent.
Add the diced carrots and celery. Continue to sauté for another 5 minutes until they start to soften.
Stir in the chopped cabbage and cook for an additional 5 minutes, allowing it to wilt slightly.
Pour in the diced tomatoes with their juice. Stir well to combine.
Add the vegetable or chicken broth to the pot.
Toss in the bay leaf and dried thyme for flavor.
Season the soup with salt and black pepper to taste. Be mindful of the salt, as the broth may already contain salt.
Bring the soup to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the vegetables are tender.
Remove the bay leaf from the soup and discard it.
Taste and adjust the seasonings if needed.
