Homemade Chinese Egg Rolls

It seems like all the Chinese restaurants in my town are disappearing, and I’ve been seriously missing my favorite egg rolls! Growing up in D.C., I developed a love for great Chinese food, so I decided to try making egg rolls myself—and they turned out delicious. I hope you enjoy them as much as we did!

Ingredients:
• 1 lb ground pork
• 1 small onion, finely chopped
• 5 cups packaged cabbage/coleslaw mix
• 1 Tbsp oyster sauce
• 1 tsp ginger paste (found in the produce section)
• 3 cloves garlic, finely minced (or 1 tsp garlic powder)
• Salt & pepper, to taste
• 2 eggs, scrambled and mashed (optional)
• 15 egg roll wrappers
• 1 quart oil, for frying

Directions:
1. Heat a small amount of oil in a pan and sauté the onions until soft.
2. Add the ground pork and cook until browned and fully cooked.
3. Stir in garlic, ginger, salt, and pepper. Add oyster sauce and mix thoroughly.
4. Add cabbage and cook for 3–5 minutes, depending on how crunchy you like your filling.
5. Place about 2 tablespoons of filling on each egg roll wrapper.
6. Starting with the corner closest to you, roll the wrapper over the filling. Fold in the sides, wet the edges with water, and continue rolling tightly to seal.
7. Ensure all edges are securely sealed to prevent oil from seeping in.
8. Heat oil to 350–360°F. (If the oil isn’t hot enough, the egg rolls will turn out greasy.)
9. Fry 1–3 egg rolls at a time until golden brown. They may darken slightly once removed from the oil. Drain on paper towels.
10. Serve with store-bought duck sauce or make your own by mixing apricot jam, a little light corn syrup, water, and a touch of ginger for added flavor.

Prep Time: 20 minutes
Cook Time: 5 minutes
Yield: 6–8 servings

Enjoy your homemade egg rolls!
