Taco Potato Bowls 🔥😮💨
Crispy potato bites topped with seasoned taco meat, rich, creamy queso, and your favorite taco toppings for a delicious, customizable meal!
Servings: 6
Ingredients:
For the Potatoes:
• 2 lbs Potatoes, chopped into bite-sized pieces (Yukon Golds recommended, but any variety works)
• 1-2 tbsp Olive Oil
• 1-2 tbsp Kinders The Blend seasoning (or substitute with garlic powder, onion powder, salt, and pepper)
• 1-2 tsps Smoked Paprika
For the Taco Meat:
• 2 lbs Ground Beef (or substitute with chicken, turkey, or your preferred ground meat)
• 2 oz Taco Seasoning
• 1 cup Water
For the Cheese Sauce:
• 12 oz Can of Evaporated Milk
• 12 oz Velveeta Cheese
• 8 oz Grated Pepper Jack Cheese
• 4 oz Can of Diced Chilies
Toppings:
• Any variety of your favorite taco toppings (lettuce, tomatoes, sour cream, salsa, etc.)
Instructions:
For the Potatoes:
1. After chopping the potatoes, place them in a large bowl. Drizzle with olive oil and sprinkle on the seasonings. Mix well to evenly coat the potatoes.
2. Cook the potatoes in an air fryer at 400°F for 20-25 minutes, tossing halfway through. If using an oven, bake at 400°F for 25-30 minutes, also tossing halfway through.
For the Taco Meat:
1. Brown the ground beef in a skillet over medium heat. Drain excess grease, then add the taco seasoning and water.
2. Let it simmer on low heat for 5-10 minutes until the meat is well-seasoned.
For the Cheese Sauce:
1. Combine all cheese sauce ingredients in a medium saucepan. Stir continuously over low to medium heat until the cheese is fully melted and smooth.
To Assemble:
1. Start by placing a serving of crispy potatoes on a plate or in a bowl.
2. Add a scoop of taco meat, then drizzle with the cheese sauce.
3. Top with any additional taco toppings you like. Enjoy!
