Homemade Chicken Katsu Curry
:
* 2 chicken breasts, pounded thin
* 1/2 cup all-purpose flour
* 1 egg, beaten
* 1 cup panko breadcrumbs
* Salt and pepper to taste
* 2 tbsp vegetable oil (for frying)
Curry Sauce
* 1 tbsp butter
* 1 small onion, finely chopped
* 2 garlic cloves, minced
* 1 carrot, diced
* 2 cups chicken broth
* 1 tbsp curry powder
* 1 tsp garam masala
* 1 tbsp soy sauce (alcohol-free)
* 1 tbsp flour (for thickening)
Step 1. Season chicken breasts with salt and pepper.
Step 2. Coat each breast in flour, dip in beaten egg, then coat with panko breadcrumbs.
Step 3. Heat oil in a pan over medium heat and fry chicken until golden and cooked through, about 4-5 minutes per side. Set aside.
Step 4. In a separate pot, melt butter and sauté onion, garlic, and carrot until soft.
Step 5. Stir in curry powder, garam masala, and flour. Cook for 1 minute.
Step 6. Gradually add chicken broth and soy sauce, stirring continuously until the sauce thickens. Simmer for 10 minutes.
Step 7. Slice the chicken katsu and serve topped with curry sauce alongside steamed rice.
