❗️FALL RECIPE: CHOCOLATE CHIP PUMPKIN SPICE
BREAD 🎃 🍞

This one is bringing all the fall vibes in every bite.
Breakfast, dessert, whatever, just enjoy! 😋

INGREDIENTS
1 15oz can of 100% pumpkin
1/2 c vanilla Greek yogurt
1 large egg
1 tsp vanilla extract
1/3 c coconut oil, measured when melted
3/4 c brown sugar, lightly packed
1 tsp baking soda
1/4 tsp sea salt
2 tsps ground cinnamon
1 tsp pumpkin pie spice
1/2 tsp nutmeg
1 c all purpose flour
1/2 c blended up old fashioned oats
1/2 c dark chocolate chips

COOKING

Preheat the oven to 350 degrees.

Lightly grease bread pan & set aside.

In a large bowl, stir together pumpkin, Greek yogurt, egg, vanilla, coconut oil (measure in melted and slightly cooled) & brown sugar until well combined. In another bowl, stir together baking soda, salt, cinnamon, pumpkin pie spice, nutmeg, flour & oat flour (measure after oats are blended)

Stir in chocolate chips. Combine wet & dry ingredients together until just combined.

Pour into pan (top with more chips if desired) and bake for 50-55 minutes or until toothpick comes out clean from center. Let rest, than slice!

SWEET POTATO 🍠 CASSEROLE - it’s that time of year again! Anyone else thinking about fall recipes & thanksgiving menus? 🍁 🎃 🍎 We are 😉

INGREDIENTS

-3 c cooked sweet potatoes sliced or cubed
-3/4 c granulated sugar
-1/2 tsp salt
-1/2 tsp vanilla extract
-2 eggs
-12 tbsps butter melted, divided use
-1 c brown sugar
-1/3 c flour
-1 c chopped pecans
-cooking spray

COOKING

1. Preheat the oven to 350. Coat a 9” square pan or 2 quart casserole dish with cooking spray.

2. Place the sweet potatoes, granulated sugar, salt, vanilla extract, eggs and 6 tablespoons of butter in a mixing bowl.

3. Beat with a mixer until well blended and fluffy.

4. Spoon the sweet potato mixture into the prepared dish in an even layer.

5. In a medium bowl, mix together the remaining 6 tablespoons of butter, brown sugar, flour and pecans.

6. Sprinkle the brown sugar mixture over the sweet potatoes.

7. Bake for 30-40 minutes or until sweet potatoes are hot and topping is lightly browned. If your topping browns too quickly, you can cover your dish with foil to complete the bake time.

8. Let sit for 10 minutes, then serve.

🥩 STEAK, VEGGIES & NOODLES HIBACHI RECIPE 🍜

With back to school we’ve been getting a lot of people requesting this delicious + easy hibachi recipe for week night dinners. A must-make! Check out the full recipe below 👇

STEAK & VEGGIES INGREDIENTS

3 tablespoons soy sauce
3 tablespoons butter, melted
1 tablespoon minced garlic
2 pounds steak strip, sirloin or rib-eye cut into bite sized pieces
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 tablespoon sesame oil

2 zucchini, halved and sliced
1 large onion, halved and sliced
2 tablespoons mirin

COOKING

1.Combine the soy sauce, butter, and garlic in a small bowl; set aside.

2. Season the steak with the salt and pepper.

3. Heat a wok, Blackstone flattop griddle, or large cast iron pan to medium-high heat. Add the oil.

4. Add the steak to the pan or flat-top griddle. Cook for 5 minutes, stirring so that all sides get brown. Add the sesame oil and cook for another minute. Top with half on the soy butter and cook until the butter melts.

6. Remove from the heat and place in a bowl or serving dish.

7. Add the zucchini and onion to the cooking surface. Season with salt and pepper.

8. Spread the vegetables in an even layer and cook for 5 minutes, stirring once halfway through. Add the mirin and remaining soy butter. Cook for another 2 minutes.

9. Serve with hibachi noodles

NOODLE INGREDIENTS

2 tablespoons butter
1 tsp sesame oil
2 teaspoon garlic, minced
1–2 tablespoons extra virgin olive oil,
8 oz ramen noodles
1/4 cup soy sauce
salt and pepper to taste
1/4 cup diced scallion

COOKING

1. Combine the sauce ingredients in a bowl and prepare the noodles as per package instructions. Rinse the noodles under cold water, drain, and set aside.  
2. Heat oil and butter in a wok or a large pan over medium heat. Add garlic and white parts of green onion and cook until fragrant. Add noodles and mix to combine. 
3. Pour in the soy sauce and cook for about 2-3 minutes until the noodles are caramelized. Add reserved green onion, and sesame oil to finish. Enjoy! 🥢
