Fluffy Pancakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions:
1. Prepare Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. Prepare Wet Ingredients:
- In another bowl, combine the milk, egg, melted butter, and vanilla extract if using.
3. Mix:
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy. Avoid over-mixing.
4. Cook Pancakes:
- Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil.
- For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.
5. Serve:
- Keep the pancakes warm in a low oven while you cook the remaining batter. Serve with your favorite toppings like syrup, fruit, or butter.
