I have a feeling you will love it. What's the cake? Was never a fan of orange chocolate combinations (and especially mint and chocolate) but I think this cake has changed my mind. It has this rich multi-chocolate layer between moussy and chocolaty with this sharp and fresh orange citrus compote. If you love those flavours, this is the cake for you. Taste 9.5/10 My visuals 7/10 The layers? Chocolate sponge cake soaked in orange and vanilla, topped with silky dark chocolate ganache, followed by orange compote (citrus peel, orange segments, orange gel, vanilla), dark chocolate mousse, Chocolate sponge cake soaked in orange and vanilla, dark chocolate mirror glaze, chocolate curls, orange gel, yellow flowers, and edible chocolate balls. The tools I used for this cake are as follows: 22cm x 4.5cm heart-shaped tart ring, 2 piping bags (or reusables) 33cm x 33cm silicone tray mat, spatula, pastry brush, and blender. Citrus peels: 60g orange peel 135g caster sugar 135g water 1 vanilla bean split in half and seeds scraped out (optional) 1g citric acid (optional) 25g caster sugar Process: Need to boil 3 times with fresh water to take out bitterness. Then cook with sugar water and vanilla till translucent. Pat try, then coat in sugar and citric acid.
