Did some beef ribs for the family tonight, and these were worth every minute. 🔥🐄

Big bone, solid bark, juicy bite, and that deep beef flavor that makes short ribs feel like brisket with a handle. I swear beef ribs are one of those cooks that look dramatic no matter what, but when they come out tender and rich like this, they disappear fast.

I was hoping they’d be good, but once I sliced into them and saw that smoke ring and all that rendered fat, I knew dinner was going to be quiet for a minute. 😂

Beef ribs don’t happen often around here, but after this round, I might need to start making them a little more regularly.

Just felt like showing off some smoked ribs today. 🔥🐖

Nothing too complicated here — just racks lined up, smoke rolling, and that color starting to hit exactly where I wanted it. Sometimes you don’t need a big story or a fancy recipe… sometimes the smoker is full of ribs and that’s enough reason to post. 😂

They came out looking saucy, smoky, and ready to disappear fast. Always hard to beat a good rib day.

First time trying smoked cream cheese and I get the hype now. 🔥

Nothing fancy at all — scored the tops, hit one with Buffalo Trace seasoning and the other with Kinder’s Cowboy Butter, then put them on the smoker at 300° for a few hours. That’s it.

I wasn’t sure if it was going to be one of those things people overhype, but nope… this stuff is dangerous. Warm, smoky, creamy, loaded with flavor, and way too easy to keep going back for “just one more bite.” 😂

Highly recommend trying it if you haven’t yet. Crackers, pretzels, chips, veggies… honestly I’d probably eat it with a spoon.

The Strombolis turned out amazing. 🔥

Smoked them at 350° for about 35 minutes, and they came out golden, cheesy, and loaded just right. I used pizza crust, deli ham, deli cheese, pepperoni, sliced mushrooms, and mild pepper rings, but honestly you could stuff these with just about anything you like.

You can add marinara inside too, but I like keeping it on the side for dipping. Less mess, better crust, and every bite gets exactly as much sauce as you want. 😂

This was one of those easy smoker meals that looks like it took way more effort than it did.

Jalapeño cheddar sausage might be one of my favorite things to come off the smoker lately 🔥🌶️🧀

That snap on the casing, the little kick from the jalapeño, and all that melty cheddar in the middle… hard to beat. I was hoping these would turn out good, but I honestly didn’t expect them to look this loaded and juicy.

Definitely one of those “grab one for a taste test” situations that turns into eating way more than planned 😂

What’s your go-to sausage combo — jalapeño cheddar, plain cheddar, or something totally different?

Got the racks lined up, smoker loaded down, and even threw some eggs up top because apparently I can’t leave empty grate space alone. 😂 There’s just something about seeing a full pit that makes the whole cook feel right.

Now it’s all about patience — letting the smoke do its thing, watching that color build, and waiting for that moment when they’re tender enough to make all the time worth it.

Nothing fancy, just a good rib day and a smoker doing what it was made to do.

Bacon… 🤌🔥

Finally got around to doing homemade bacon and now I understand why people say it ruins store-bought forever. From the slabs on the smoker, to the first test slices, to vacuum sealing it all up… this was a whole process, but absolutely worth it.

The color, the smoke, the fat-to-meat ratio, and that first crispy bite had me standing there like, “Yep… I’m doing this again.” 😂

There’s something dangerous about having this much bacon packed away because suddenly every breakfast, burger, sandwich, and side dish feels like it needs bacon now.

Who else makes their own bacon, and what wood are you using for the smoke? 🐖🔥🤔

I’ve been searching everywhere for beef ribs, and I finally found a great rack from Brandt Farms. 🤙🔥🖤

These are exactly what I was hoping for — big bones, deep bark, juicy meat, and that rich beefy bite that makes beef ribs feel like brisket’s louder cousin. I’ve wanted to do these for a while, and once they came off the smoker, I knew the search was worth it.

There’s just something about beef ribs when they’re cooked right. Smoky, tender, packed with flavor, and dramatic enough to make you stand there staring at them before you even take a bite. 😂

First attempt at burnt ends and I’m not even gonna lie… I was pretty nervous going into this one 😅🔥

I’ve seen so many people make these look easy, but getting that sticky glaze, rich color, and those little caramelized edges felt like a whole different game. They turned out smoky, sweet, saucy, and ridiculously hard to stop eating once I started “taste testing” 👀

Definitely learned a few things along the way, but for a first run, I’m calling this one a win. Now I’m already thinking about what I’d tweak next time.

Clearly he didn’t trim every single bit, but he did a lot, took the criticism well, and honestly… I’m proud of him. 🔥🐄

For a young pit helper, he handled that brisket pretty good. He listened, cleaned it up, learned as he went, and didn’t get frustrated when I pointed things out. That’s about all you can ask for when someone is learning their way around a big piece of beef.

I’m not usually a big fan of prime, but it was the same price as choice, so I figured why not. The trim looks clean enough to me, and now we’ll see what it does on the smoker.

Looks like I might have a future brisket guy in training. 😂
