Canning salt or pickling salt
White vinegar, 5% acidity
Water
Optional: garlic cloves, dill, peppercorns, or pickling spices

Instructions

Wash the green tomatoes well, then slice them into even 1/4-inch rounds.

Pack the slices neatly into clean canning jars, stacking them gently so they stay pretty and easy to remove later.

Add canning salt if using, along with any garlic, dill, peppercorns, or pickling spices you like.

Prepare a hot vinegar-and-water brine using a tested safe canning recipe. Bring the brine to a boil.
