Box Co-Founder and Head of Production Suk Choi holds two undergraduate degrees in painting and a Masters from Pratt in painting and printmaking. We think this leads to a higher caliber of work and to better problem-solving. Suk began as many creative professionals do—as an artist. He’s classically trained and possesses an artist’s knowledge of color and composition learned from years of studying p

ainting and printmaking at Seoul National University, Cal State Fullerton, and at Pratt University where he received an MFA in 1984. For years, Suk kept one foot in the art world and the other in business, first as a college student who also held a job prototyping circuit boards for aerospace contractors, then as a grad student working at Ogilvy & Mather, where he eventually rose to studio supervisor. Suk held this position until 1990 when he and his wife, Myung, formed Box Graphics. Myung Choi is co-founder and co-owner of Box.

A very important thing I learned today: Dip the Corn Tortilla in water and toss it straight on a hot surface. As the surface moisture evaporates, it steams the tortilla until it's soft all the way through. Meanwhile, the hot contact with the pan gives it some nice toasty browned spots.

Finally, stacking the heated tortillas and wrapping them in a towel is an essential final step, allowing them to soften with their own steam until they are perfectly tender.

If your filling is juicy (as it should be), do double stack.

I've always felt that the tortillas for a taco—just like the crust on a pizza or the bread for a sandwich—are at least as important as what goes inside it. This makes it particularly distressing to see the number of taquerias that simply don't heat their tortillas correctly. Here's how to do it.
