Quesadillas 4 Ways
Full Recipe : BBQ CHICKEN QUESADILLA
Servings: 1- 2 quesadillas
INGREDIENTS
1/2 pound chicken breast, cut into strips
Salt, to taste
Pepper, to taste
½ cup BBQ sauce
2 flour tortillas
¼ cup red onion, julienned
1/2 cup monterey jack cheese (double for 2 quesadillas)
1/2 cup cheddar cheese (double for 2 quesadillas)
GARNISH
Parsley
BBQ sauce
PREPARATION
1. In a large skillet, add chicken breast and season both sides with salt and pepper. Cook 15-18 minutes, flipping halfway and adding the onions when you flip the chicken. (Cooking times may vary depending on thickness of the chicken breast).
2. Remove the chicken from the pan and shred with a fork.
3. Return the shredded chicken to the pan with the onions. Add the BBQ sauce and stir. Remove from the pan and set aside.
4. Place a tortilla in a pan and add a layer monterey jack and cheddar cheese on half of the tortilla.
5. Place cooked chicken and onions, and top with the rest of each cheese. Fold in half and cook 6 minutes, flipping halfway.
6. Serve with extra BBQ sauce & enjoy!
SPINACH & MUSHROOM QUESADILLA
Servings: 2 quesadillas
INGREDIENTS
1 tablespoon olive oil
½ cup mushrooms, sliced
2 cloves garlic
3 cups fresh spinach
Salt, to taste
Pepper, to taste
3 eggs
2 large flour tortillas
1 cup mozzarella, shredded (double for 2 quesadillas)
½ cup parmesan, shredded (double for 2 quesadillas)
GARNISH
Parsley
Salsa
PREPARATION
1. Let the oil heat up in the skillet and add the garlic followed by the mushrooms. Cook until the mushrooms have softened and caramelized a bit.
2. Add the spinach and cook until spinach has wilted.
3. Crack in the eggs and scramble with the veggies. Season with salt and pepper, and stir until fully cooked. Remove from the pan and set aside.
4. Place the tortilla in the skillet and add a layer of both cheeses on half of the tortilla.
5. Add the scramble, top with more cheese and fold the tortilla in half.
6. Cook for 6 minutes over medium heat, flipping half way.
7. Serve with salsa & enjoy!
CHEESESTEAK QUESADILLA
Servings: 2 quesadillas
INGREDIENTS
1 tablespoon olive oil
½ pound skirt steak, sliced into thin strips
Salt, to taste
Pepper, to taste
¼ cup onion, julienned
¼ cup green bell pepper, julienned
2 large flour tortillas
4 slices provolone cheese (double for 2 quesadillas)
GARNISH
Parsley
Cheese sauce
PREPARATION
1. Heat olive oil in a large skillet and add the strips of skirt steak. Season with salt & pepper and cook 5-7 minutes. Remove from the pan.
2. Add onion and bell peppers to the pan and cook until slightly soft. Remove from skillet.
3. Place the tortilla in the pan and add a layer of cheese on half of the tortilla followed by the steak, peppers and onions. Top with more cheese and fold in half.
4. Cook for 6 minutes over medium heat, flipping half way.
5. Serve with cheese sauce & enjoy!
CHICKEN FAJITA QUESADILLA
Servings: 2 quesadillas
INGREDIENTS
½ pound chicken breast, cut into thin strips
½ teaspoon salt
½ teaspoon pepper
½ tablespoon chili powder
½ teaspoon cumin
¼ teaspoon cayenne
¼ teaspoon garlic powder
½ cup green/red/yellow bell pepper, julienned
½ cup white onion, julienned
2 large flour tortillas
1 cup cheddar cheese, shredded (double for 2 quesadillas)
1 cup monterey jack cheese, shredded (double for 2 quesadillas)
GARNISH
Cilantro
Guacamole
Sour Cream
PREPARATION
1. In a large skillet, coat chicken with salt, pepper, chili powder, cumin, cayenne, and garlic powder. Cook 5-7 minutes.
2. Add the peppers and onions and cook for 5-7 minutes, or until they are soft. Remove chicken, onions and peppers from the pan and set aside.
3. Place the tortilla in the skillet and add a layer of cheese on half of the tortilla.
4. Add cooked chicken, peppers and onions. Top with more cheese and fold the tortilla in half.
5. Cook for 6 minutes over medium heat, flipping half way.
6. Serve with pico de gallo, guacamole, and sour cream on the side & enjoy!

Cauliflower Crust Pizza
Servings 2-3
INGREDIENTS
1 head cauliflower
½ cup mozzarella, shredded
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon garlic powder
1 egg
PREPARATION
1. Preheat oven to 500˚F/260˚C.
2. Remove the leaves and stem of the cauliflower and transfer pieces to a food processor.
3. Rice the cauliflower by pulsing it in the food processor, or by shredding it on a box grater.
4. Once riced, transfer to a large bowl and microwave for 4 minutes. Let it cool down for a few minutes before handling!
5. Transfer cooked cauliflower to a clean towel and wring out as much liquid as possible.
Place wrung cauliflower in a bowl and combine with mozzarella, oregano, basil, salt, 6. garlic powder, and an egg. Mix well.
7. Line a baking sheet with parchment paper and place cauliflower mixture in the middle. Spread out the mixture and form a circle out of the cauliflower mixture, pushing along the edge to raise a “crust.”
8. Bake for 15 minutes, or until the crust has become golden brown in the center and on the edges.
9. Top with your favorite pizza sauce and toppings, being careful not to overload the pizza.
10. Bake for another 5-7 minutes, or until the cheese has fully melted.
11. Enjoy!

Ingredients for Dhokala
For making dhokala mixture:
Gram flour - 1 cup
Semolina - ¼ cup
Curd 1/2 cup
Lemon juice - 1
Sugar - 2 tsp
Salt -3/4 tsp
Eno fruit salt - 1 tsp
Haldi half tsp
Water for preparing batter
For making tadka:
Green chilly - 2 (cut length wise)Green coriander - 2 tbsp (fiOil - Black mustard seeds - ½ tsp
Curry leaves- 5-6
Take gram flour and semolina , curd in any bowl and little water at a time. Stir until all lumps get dissolved. The batter should not be too thick or too thin in consistency.
Add salt and 1 tsp sugar in the gram flour batter. Also add lemon juice in the batter. Keep it aside . For making batter ¾ cup of water is used.
For making dhokala, take a 7-8 inch diameter microwave safe bowl and grease it with some oil.
add eno fruit salt and mix really well. Batter seems to become puffy. Now pour the batter in greased microwave safe bowl. Tap the bowl on surface gently so that the mixture gets even. Cover the bowl and place it in microwave. Set the temperature to maximum for 5 to 6 min and microwave the batter. For checking, insert a knife in the batter if it sticks to the knife, microwave for 1 more minute and give 2 minute standing time. Insert knife again, it comes out clean. Microwave dhokala is ready.
How to make tadka:
For making tadka, take some oil in a pan and place it on flame for heating. Add black mustard seeds, curry leaves, and sauté for few minutes. Now add green chilly as well. Add ½ cup water and rest of the sugar as well. Cook until water starts boiling and sugar melts completely. Tadka for dhokala is ready.
Run knife all around the dhokala for separating it from bowl. Place a plate on bowl and flip it. Cut dhokala as per your preference. Now pour the tadka water on dhokala pieces with help of a spoon. Dhokala absorbs the water and becomes soggy. Garnish with green coriander and coconut. Microwave dhokala is ready....
Serve chilled. ..
