Ingredients
2 pounds Calrose potatoes, peeled and sliced ⅛-inch thick
2 cans (10.5 ounces each) condensed cream of chicken soup
2 cups shredded sharp cheddar cheese, divided
1 cup sour cream
Cooking spray or a little butter, for coating the slow cooker
Instructions
Lightly coat the inside of a 5- to 6-quart slow cooker with cooking spray or a little butter.
In a large bowl, stir together the condensed cream of chicken soup, sour cream, and 1½ cups of the shredded cheddar cheese until well combined.
Add the sliced potatoes and gently fold until the slices are evenly coated with the creamy mixture.
Spoon the potato mixture into the slow cooker and spread it into an even layer.
Cover and cook on low for 5–6 hours or high for 3–4 hours, until the potatoes are tender.
Sprinkle the remaining ½ cup cheddar cheese over the top. Cover and cook for another 15–20 minutes, until the cheese is melted and the casserole is bubbling around the edges.
Let stand for 10 minutes before serving.
