FROZEN MANGO COOKIE SANDWICHES 🥭
INGREDIENTS:
▪️1 mango about 300 g 10 oz
▪️50 g cream cheese about 2 tbsp
▪️12 sugar free cookies
▪️80 g dark chocolate 2.8 oz
⏳ Time 4 hours freezing
🌡 Temperature Freezer plus short refrigeration
STEPS:
1️⃣ Peel and chop the mango and blend it with the cream cheese until smooth and creamy.
2️⃣ Place one cookie at the bottom of small molds or directly on a tray.
3️⃣ Add a spoonful of the mango mixture on top of each cookie.
4️⃣ Place another cookie on top and press gently to form a sandwich.
5️⃣ Freeze for at least 4 hours until completely firm.
6️⃣ Melt the dark chocolate until smooth.
7️⃣ Dip each frozen sandwich into the chocolate, coating it completely.
8️⃣ Refrigerate for a few minutes until the chocolate sets.

HOMEMADE REESES BITES 🍓
INGREDIENTS:
▪️3 strawberries
▪️200 g dark chocolate 7 oz about 1 cup melted
▪️2 tbsp peanut butter
▪️40 g almond flour 1.4 oz about ⅓ cup
▪️1 tbsp honey
⏳ Time 10 minutes prep plus 2 to 3 hours chilling
🌡 Temperature Refrigerate
STEPS:
1️⃣ Melt the dark chocolate until smooth and glossy.
2️⃣ Pour a thin layer of chocolate into the base of small molds and spread evenly.
3️⃣ In a bowl mix the peanut butter, almond flour, and honey until a soft dough forms.
4️⃣ Shape small portions with your hands and place them on top of the chocolate layer.
5️⃣ Cover with more melted chocolate until fully sealed.
6️⃣ Add small pieces of strawberry on top.
7️⃣ Refrigerate for 2 to 3 hours until firm.
8️⃣ Remove from the molds and enjoy.

BROCCOLI SAVORY PIE 🥦
INGREDIENTS:
▪️1 broccoli about 300 g 10 oz
▪️150 g shredded chicken 5 oz
▪️1 leek
▪️10 to 15 cherry tomatoes
▪️3 eggs
▪️1 tbsp cream
▪️Spices to taste
▪️2 tbsp grated cheese
⏳ Time 30 minutes
🌡 Temp 180°C 350°F
STEPS:
1️⃣ Preheat the oven to 180°C 350°F and prepare a baking dish.
2️⃣ Cook the broccoli until soft and drain well.
3️⃣ Mash or press the broccoli and spread it evenly on the base of the mold to form a crust.
4️⃣ Add the shredded chicken, sliced leek, and cherry tomatoes on top.
5️⃣ In a bowl whisk the eggs with the cream and spices until well combined.
6️⃣ Pour the mixture over the filling.
7️⃣ Sprinkle grated cheese on top.
8️⃣ Bake for about 30 minutes until set and lightly golden.

APPLE CLOUD MARSHMALLOWS 🍎
INGREDIENTS:
▪️700 g apples 1.5 lb about 4 cups chopped
▪️100 ml water about ⅓ cup
▪️40 g flavored gelatin red berry about 1.4 oz
⏳ Time 15 minutes mixing plus 4 hours chilling
🌡 Temperature Refrigerate
STEPS:
1️⃣ Peel and cut the apples into small pieces.
2️⃣ Boil them in water for about 5 minutes until soft.
3️⃣ Blend the cooked apples with a bit of water until you get a smooth purée.
4️⃣ Add the gelatin powder to the warm mixture.
5️⃣ Beat the mixture at high speed for about 15 minutes until it becomes light, fluffy, and airy.
6️⃣ Pour the mixture into a mold and smooth the surface.
7️⃣ Refrigerate for at least 4 hours until fully set.
8️⃣ Cut into pieces and enjoy.

▪️340 g dark chocolate 12 oz about 2 cups chopped
▪️6 eggs
⏳ Time 25 to 30 minutes
🌡 Temp 180°C 350°F
STEPS:
1️⃣ Preheat the oven to 180°C 350°F and prepare a baking mold with parchment paper.
2️⃣ Melt the dark chocolate until smooth and glossy and let it cool slightly.
3️⃣ In a bowl mix the melted chocolate with the Greek yogurt until thick and fully combined.
4️⃣ Add the eggs one by one, mixing continuously until the batter becomes smooth and creamy.
5️⃣ Pour the mixture into the prepared mold and spread evenly.
6️⃣ Bake for about 25 to 30 minutes until set but still slightly soft in the center.
7️⃣ Let it cool completely before slicing for the best texture.

HOMEMADE BUTTER 🧈
INGREDIENTS:
▪️500 ml cold heavy cream about 2 cups
⏳ Time 10 to 15 minutes
🌡 Temperature Cold preparation
STEPS:
1️⃣ Pour the cold heavy cream into a large bowl.
2️⃣ Beat it with a mixer until it first becomes whipped cream and then starts to separate.
3️⃣ Keep mixing until the butter solids separate from the liquid buttermilk.
4️⃣ Strain the mixture to remove all the buttermilk.
5️⃣ Rinse the butter under cold water while gently pressing it to remove any remaining liquid.
6️⃣ Shape the butter with your hands into a compact block.
7️⃣ Wrap it in parchment paper and mold it again for a smooth finish.
8️⃣ Store in the fridge until ready to use.

HOMEMADE MAGNUM ICE CREAM🍦🍫
INGREDIENTS:
For the ice cream:
▪ 2 ripe bananas
▪ 150g (½ cup) Greek yogurt
▪ 2 tbsp (1 oz) peanut butter
▪ 75 ml (⅓ cup) milk of choice
▪ A pinch of vanilla extract
▪ Sweetener to taste (optional)
For the coating:
▪ 150g (5.3 oz or about 1 cup chopped) dark chocolate
▪ 30g (1 oz or ¼ cup) chopped almonds
⏳ Time: 10 min prep + 4 hours freezing
🌡 Temp: Freezer
1️⃣ Blend the bananas, Greek yogurt, peanut butter, milk, vanilla extract, and sweetener (if using) until smooth.
2️⃣ Pour the mixture into popsicle molds and freeze for at least 4 hours or until fully set.
3️⃣ Melt the dark chocolate and mix in the chopped almonds.
4️⃣ Unmold the frozen popsicles, dip them in the chocolate coating, and freeze again for 5–10 minutes to harden

GLUTEN FREE LENTIL BREAD 🍞🤍

INGREDIENTS:

▪️150 g soaked lentils minimum 4 hours 5 oz about ¾ cup
▪️120 ml water about ½ cup
▪️1 tsp salt
▪️4 tbsp psyllium husk
▪️1 tbsp olive oil
▪️1 tsp baking powder

⏳ Time 25 minutes baking plus 10 minutes resting
🌡 Temp 180°C 350°F

STEPS:

1️⃣ Preheat the oven to 180°C 350°F and line a baking tray with parchment paper.
2️⃣ Drain the soaked lentils and place them in a blender with the water and salt. Blend until smooth.
3️⃣ Transfer the mixture to a bowl and add the psyllium husk, olive oil, and baking powder.
4️⃣ Mix well until everything is combined and let the dough rest for about 10 minutes so it thickens.
5️⃣ Shape the dough into small round buns using your hands.
6️⃣ Place the buns on the prepared baking tray leaving space between them.
7️⃣ Bake for about 25 minutes until the breads are firm and lightly golden.
8️⃣ Let them cool slightly before serving.
