French lemon butter chicken 🍋🍗

Crispy chicken, golden potatoes, rosemary, butter, and fresh lemon. That buttery lemon flavor makes this one so good when you want something savory with a little brightness.

How to make it:

1. Cut boneless chicken thighs into large pieces and slice the potatoes into long strips, leaving the skin on.
2. Season the chicken with salt, onion and garlic powder, and black pepper. Let it sit for 10 minutes.
3. Heat a little olive oil in a skillet. Add the potatoes, season with salt and black pepper, and cook until golden. Flip, lower the heat, add a splash of water, cover, and cook for about 8 minutes. Remove when tender.
4. Add a little more olive oil to the skillet. Place the chicken skin-side down and cook until crispy and golden, then flip.
5. Add rosemary and a k**b of butter. Once the butter melts, squeeze in fresh lemon juice and let the chicken simmer for another 3–5 minutes.

Steak ciabatta sandwich 🥪🥩

Steak + caramelized onions and mushrooms + kale + fresh greens + tomato basil ciabatta. Slather a little butter on the ciabatta 🧈 and pop it in the air fryer at 350°F for about 3 minutes until golden and crispy.

And just a heads up… this sandwich is seriously stacked 😂 Might be a little tricky if you have a small mouth. Good luck getting that first bite in!

Dinner in 15 mins! Curry beef rice bowl 🍳🥩

Haven’t had curry in ages, and this was so good with a runny fried egg on top.

The curry beef with potatoes, carrots and onions goes so well over warm quinoa rice. Add that crispy egg with the soft yolk and dinner is done.

Ingredients

Ground beef
Carrots
Potatoes
Onion
Fresh cilantro
Curry powder
Salt
Black pepper
Cooking wine
All-purpose seasoning
Olive oil
Cooked quinoa rice
Eggs

How to make it

1. Dice the carrots, potatoes and onion into small cubes. Chop the cilantro and set aside.
2. Heat a little oil in a pan and add the diced vegetables. Cook until fragrant, then add salt.
3. Add the ground beef and stir until everything is well combined. Add a splash of cooking wine, a little all-purpose seasoning and a generous amount of curry powder. Cook until the beef is fully done.
4. Stir in the chopped cilantro right before serving.
5. Heat a little oil in another pan and fry an egg until the edges are crispy but the yolk is still soft.
6. Spoon the curry beef over warm quinoa rice and top with the fried egg.

What to make when pasta is always the answer? This one is quick, easy, and made with whole grain rice noodles instead of regular wheat pasta.

The tomato beef and black pepper beef flavors both work really well with tomatoes, basil, and a simple sauce.

Ingredients

Gluten-free rice noodles
Cherry tomatoes
Fresh basil
Olive oil
Salt
Parsley
Parmesan cheese

How to make it

1. Cut the cherry tomatoes in half and rinse the basil. Pat the basil dry.
2. Bring a pot of water to a boil. Add a little salt and olive oil, then cook the rice noodles for 9–11 minutes, or according to the package directions. Drain and set aside.
3. Heat a little olive oil in a skillet and sauté the tomatoes until they soften and release some juice.
4. Add the tomato beef sauce and stir for a minute until warmed through. Add the cooked noodles and toss everything together.
5. Transfer to a plate and top with fresh parsley and Parmesan cheese.

For the black pepper beef flavor, use the same method: cook the noodles, add them to the skillet with the sauce, toss well, and serve.

Easy potato & shrimp salad 🥔🍤

I had a cheat meal yesterday, so today I wanted something lighter without making lunch feel boring.

Roasted potatoes and broccoli with crispy bacon, shrimp, eggs, and a simple Greek yogurt dressing… honestly, this turned out so good.

Ingredients
Potatoes
Bacon
Broccoli
Eggs
Black tiger shrimp
Olive oil
Salt
Black pepper
Garlic powder
Onion powder

For the dressing
2 tbsp Greek yogurt
1 tbsp vinaigrette
Black pepper

How to make it

1. Cut the potatoes into large chunks, chop the broccoli, and dice the bacon. Boil the eggs until soft-boiled and set aside.
2. Season the potatoes with salt, black pepper, garlic powder, onion powder, and a little olive oil. Toss well and spread them on a baking tray with the bacon.
3. Bake at 350°F for about 30 minutes.
4. Bring a pot of water to a boil. Add the broccoli and cook for about 1 minute, then drain.
5. Boil another pot of water and cook the shrimp for about 50 seconds. Remove and set aside.
6. Add the broccoli to the roasted potatoes and bacon, then bake for another 5 minutes.
7. Mix the Greek yogurt, vinaigrette, and black pepper together for the dressing.
8. Add everything to a bowl, including the shrimp and eggs. Drizzle with the yogurt dressing, give it a good mix, and enjoy.
