Invisible Apple Cake. This cake is so fresh and delicious, perfect with a scoop of vanilla ice cream

2 lbs apples peeled, sliced 1/8 inch thick
1 cup flour
1 tspn baking powder
1/2 tspn cinnamon
1/4 tspn nutmeg
1/4 tspn salt
2 tblspn melted butter
1/2 cup whole milk (room temp)
1 tspn vanilla extract
3 large eggs
2/3 cup granulated sugar

Bake at 375 F for 75 minutes, let it cool completely, then service with vanilla ice cream and enjoy!

These date balls are SO delicious and decadent. They are dairy and gluten free. Recipe below.

1 box dates (1lb)
1/3 cups hazelnuts
1 can coconut cream
1/3 cup cocao nibs

Soak dates in boiling water 10-20 min. Toast hazelnuts in toaster oven. Blend all ingredients together until completely smooth and blended. Scoop mixture with small scooper into balls and place onto baking sheet/ parchment paper. Freeze for 2-3 hours. Take out balls and re-form them into balls (ball them into round balls with hands) Freeze again for 1 hour. Double boil dark chocolate then cover balls in chocolate, immediately top with Maldon salt. Refreeze for 1-2 more hours.

Meatball soup (frikadelki soup). Serve with lemon + dill

1 onion finely chopped
2 bay leaf
2-4 carrots
2 Tblspn cup jasmine rice
2 potatoes
2 big jugs of water
Salt
Soup seasoning
Italian seasoning
6 cloves garlic

Meatballs
1.5 lbs ground beef
1 egg
1/2 onion
2 garlic cloves
Salt

Chia Seed Pudding

2-3 ripe bananas
1 can coconut cream
1/4 cup coconut sugar
1 Tspn vanilla extract
1/2 Tspn lemon juice
Pinch of salt
6.5 Tablespoons chia seeds

Blend the first 5 ingredients together then add chia seeds and blend again. Pour into glass container and let it sit out covered for 20 min then mix with spoon. Refrigerate for 4 hours. Add toppings and enjoy!
