美國廚神當道第8季亞軍的臺裔主廚Jason Wang Chef Jason J. Wang 王凱傑 將於10月2日擔任經濟部商業發展署「2026臺灣味：琥珀油香競賽」決賽評審，與評審團共同品評30組入圍料理。

傳統組與創新組各15組，從經典手藝到食材與技法的新嘗試，展現油蔥的多元風味。Jason Wang 將以跨文化的飲食視角，品評主廚如何將日常蔥香，化為令人記住的料理特色。

10月2日，我會來到臺北世貿一館，擔任「2026臺灣味：琥珀油香競賽」的決賽評審。

這次的題目很有意思，就是大家都很熟悉的「油蔥」！30組參賽者，要用這個經典味道，端出各自的拿手料理。我很期待，油蔥除了香、除了好吃，還能玩出多少創意！10月2日，邀請大家一起關注！

Hi everyone! I'm super excited to share I'll be back in Taiwan next week as a judge for the finals of the "Taiwan Flavor: Amber Oil Aroma Cooking Competition" sponsored by the Taiwan Ministry of Economic Affairs. This year's theme ingredient is the oil fried red shallot used ubiquitously throughout Taiwanese cuisine as a signature flavoring component.

I'm so looking forward to experiencing the creativity and flavor of the dishes in the final round, and giving helpful & detailed critiques! 😅

請問一下有沒有人可以推薦怎麼樣用或是料理？這種非常辣的辣椒呢？我今年種的這一顆結了差不多40個小辣椒！這種事那種超級辣的 habanero-type！真的不想浪費他們.如果你們有什麼好的想法或是簡單的食譜請分享！ 這種辣椒比朝天椒要辣至少五倍… 😵‍💫! 謝謝你們的推薦！

Can anybody help me out? I grew these 'Velociraptor' habanero-type chili peppers but never usually cook with peppers this spicy... (Scoville 150,000-220,000)! Jalapeños are usually 2,000-8,000.

Any recipes or easy suggestions on how to use these or preserve them? Thank you, cuz I don't want them to go to waste!

I’m honored to be invited to serve as a judge for the finals of the “2025 Sesame Oil Cooking Competition” hosted by Taiwan’s Ministry of Economic Affairs in Taipei this year! I’ll also showcase a unique dish using sesame oil as the key ingredient for the featured food demo 🥳! The event will be at the Nangang Exhibition Center on Oct. 26th. Hope to see you there!
