Great recipe to make for Meal Prep! 😋
Oven-Baked Meatballs

Servings: ~20 meatballs
Prep Time: 15 mins
Cook Time: 20–25 mins

Ingredients:
• 1 lb (450g) ground beef (80/20 is ideal)
• 1/2 cup breadcrumbs (Italian-seasoned or plain)
• 1/4 cup grated Parmesan cheese
• 1/4 cup milk
• 1 large egg
• 2 cloves garlic, minced
• 1/4 cup chopped parsley (or 1 tsp dried)
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp onion powder (optional)
• 1/2 tsp crushed red pepper flakes (optional for heat)

Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix breadcrumbs and milk in a large bowl. Let sit for 2 minutes to absorb.
3. Add remaining ingredients to the bowl: ground beef, egg, Parmesan, garlic, parsley, salt, pepper, and any optional spices.
4. Mix gently with your hands or a fork until combined—don’t overmix or the meatballs can get tough.
5. Form into balls (about 1.5 inches wide) and place them on the baking sheet, evenly spaced.
6. Bake for 20–25 minutes, or until browned and cooked through (internal temp should be 160°F/71°C).
7. Serve with marinara, pasta, in a sub, or just as-is with a drizzle of olive oil.

Delicious Classic Egg Salad!

Cook Time: 10 minutes

Ingredients:
• 6 large eggs
• 1/4 cup mayonnaise
• 1 tsp yellow mustard (or Dijon for a twist)
• 1 tbsp finely chopped red onion (optional)
• 1 tbsp chopped celery (optional, for crunch)
• 1 tsp fresh chives or dill (optional, for flavor)
• Salt & black pepper to taste
• Paprika (optional, for garnish)

Instructions:
1. Boil the eggs:
• Place eggs in a saucepan and cover with cold water.
• Bring to a boil, then turn off heat, cover, and let sit for 10–12 minutes.
• Transfer eggs to an ice bath or run under cold water to stop cooking.
• Peel once cool.
2. Prepare the eggs:
• Chop the peeled eggs into small pieces (some like it chunky, others smoother—your call).
3. Mix the salad:
• In a bowl, combine chopped eggs, mayo, mustard, onion, celery, and herbs if using.
• Season with salt and pepper to taste.
• Mix gently until well combined.
4. Serve:
• Spoon onto toast, sandwich bread, crackers, or into lettuce wraps.

Ingredients (serves 4–6):

Colorful Fresh Fruits (washed & dried):
•Red: Strawberries, raspberries, red grapes, watermelon cubes
•Orange: Mandarin orange slices, cantaloupe cubes
•Yellow: Pineapple chunks, golden kiwi slices
•Green: Green grapes, honeydew melon, kiwi slices
•Blue/Purple: Blueberries, blackberries, purple grapes, figs (if available)

Chocolate Varieties:
•Dark chocolate squares or truffles
•Milk chocolate pieces or chocolate-covered pretzels
•White chocolate bark or dipped fruits
•Chocolate-dipped strawberries (optional)
•Chocolate almonds or hazelnuts

Extras (optional, but amazing):
•Chocolate hummus or Nutella for dipping
•Fresh mint leaves for garnish
•Mini cookies or graham crackers
•Marshmallows or chocolate-covered marshmallows
