🍋 simple and delicious recipe for Lemon Shrimp Seafood Pasta in the Crockpot!
This dish is perfect for a hassle-free, flavorful meal.

Ingredients:
1 lb large shrimp (peeled and deveined)
1/2 lb scallops (optional, can be replaced with other seafood)
8 oz pasta (penne, spaghetti, or linguine)
1 lemon (zested and juiced)
3 cloves garlic (minced)
1 cup heavy cream
1/2 cup chicken broth (or seafood broth)
1/2 cup Parmesan cheese (grated)
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon red pepper flakes (optional, for heat)
Salt and pepper (to taste)
Fresh parsley (for garnish)

Instructions:
Prepare the Crockpot:
Coat the inside of your Crockpot with a light layer of cooking spray or drizzle a little olive oil to prevent sticking.

Add the Seafood:
Place the peeled shrimp and scallops (if using) into the Crockpot.

Prepare the Sauce:
In a small bowl, combine the heavy cream, chicken broth, garlic, lemon juice, lemon zest, basil, parsley, red pepper flakes, salt, and pepper. Stir well to combine.

Mix Everything Together:
Pour the sauce mixture over the seafood in the Crockpot, making sure the shrimp and scallops are well-coated.

Cook:
Cover and cook on low for 2 to 2.5 hours. The shrimp should turn pink and be fully cooked. Be careful not to overcook the seafood.

Cook the Pasta:
While the seafood is cooking, bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.

Finish the Dish:
Once the seafood is cooked, add the cooked pasta to the Crockpot. Stir everything together to combine the pasta with the creamy seafood sauce.

Sprinkle the Parmesan cheese over the top and stir to melt it into the sauce.

Serve:
Garnish with freshly chopped parsley and an extra squeeze of lemon if desired.

Tips:
You can add extra veggies like spinach or sun-dried tomatoes for more flavor and color.

Here’s a simple and quick recipe for easy Tiramisu that you can whip up in no time!

Easy Tiramisu Recipe
Ingredients:
1 package (7 oz) of ladyfingers
1 cup strong brewed coffee (cooled to room temperature)
2 tbsp rum or coffee liqueur (optional)
1 cup heavy whipping cream
8 oz mascarpone cheese (room temperature)
1/2 cup powdered sugar
1 tsp vanilla extract
Unsweetened cocoa powder for dusting
Chocolate shavings (optional)

Instructions:

Prep the coffee mixture:
Brew the coffee and let it cool to room temperature. If you’re using rum or coffee liqueur, mix it in with the coffee.

Whip the cream:
In a large bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form.

Mix mascarpone:
In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Use a hand mixer to mix until smooth and creamy.

Fold in the whipped cream:
Gently fold the whipped cream into the mascarpone mixture until smooth. Be careful not to deflate the whipped cream too much.

Assemble the tiramisu:
Quickly dip the ladyfingers into the coffee mixture (don’t soak them too long!) and arrange them in the bottom of a 9x9-inch dish or a similar-sized baking pan.

Spread half of the mascarpone mixture over the ladyfingers layer.
Add another layer of dipped ladyfingers on top and spread the remaining mascarpone mixture evenly on top.

Chill:
Cover the tiramisu and refrigerate for at least 4 hours or overnight to let the flavors meld together and the dessert set.

Serve:
Before serving, dust the top with unsweetened cocoa powder and add some chocolate shavings if desired.

Ingredients:
For the crust:
1 pre-made graham cracker crust (9-inch)
– or –
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp unsalted butter, melted

For the filling:
1 (3.4 oz) package instant vanilla pudding mix
1 ¾ cups cold whole milk
1 cup heavy whipping cream
⅓ cup powdered sugar
3 medium ripe bananas

Optional topping:
Extra whipped cream
Crushed graham crackers or vanilla wafers
Sliced banana (add just before serving to avoid browning)

Instructions:
1. Make or prep the crust (if not using pre-made):

Preheat oven to 350°F (175°C).

Mix graham crumbs, sugar, and melted butter.

Press firmly into a 9-inch pie pan.

Bake for 8–10 minutes, then cool completely. (Skip this step for a store-bought crust.)

2. Prepare the pudding filling:

In a medium bowl, whisk the pudding mix with cold milk for 2 minutes. Let sit for 5 minutes to thicken.

3. Make whipped cream:

Beat heavy whipping cream and powdered sugar until stiff peaks form (about 3–4 minutes).

4. Fold and layer:

Gently fold half the whipped cream into the pudding to make it fluffy.

Slice bananas and layer them on the bottom of the cooled crust.

Pour the pudding mixture over the bananas and smooth the top.

5. Chill:
Cover and refrigerate for at least 4 hours (or overnight) to set.

🛒 Ingredients
2 boneless chicken breasts (or thighs)

1 zucchini (or any veggie you like)
1 bell pepper
1/2 cup dry quinoa (or microwave brown rice)
2 tablespoons olive oil
1 lemon (or splash of bottled lemon juice)

Salt, pepper, and any dried herbs you like (oregano, Italian seasoning, etc.)

🔥 Instructions
Cook the Quinoa:
Add 1/2 cup quinoa and 1 cup water to a pot.
Bring to a boil, cover, simmer for 15 minutes, then fluff with a fork.
(Or use a microwave rice packet to save time.)

Cook the Chicken & Veggies:
Chop chicken and veggies into bite-size pieces.
Toss them with olive oil, lemon juice, salt, pepper, and herbs.
Cook in a large pan over medium-high heat for 10–12 minutes until chicken is done and veggies are soft.

Assemble Bowls:
Scoop quinoa into bowls, top with chicken and veggies.
Optional: drizzle a little extra lemon juice or olive oil on top.
