🍋 simple and delicious recipe for Lemon Shrimp Seafood Pasta in the Crockpot!
This dish is perfect for a hassle-free, flavorful meal.
Ingredients:
1 lb large shrimp (peeled and deveined)
1/2 lb scallops (optional, can be replaced with other seafood)
8 oz pasta (penne, spaghetti, or linguine)
1 lemon (zested and juiced)
3 cloves garlic (minced)
1 cup heavy cream
1/2 cup chicken broth (or seafood broth)
1/2 cup Parmesan cheese (grated)
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon red pepper flakes (optional, for heat)
Salt and pepper (to taste)
Fresh parsley (for garnish)
Instructions:
Prepare the Crockpot:
Coat the inside of your Crockpot with a light layer of cooking spray or drizzle a little olive oil to prevent sticking.
Add the Seafood:
Place the peeled shrimp and scallops (if using) into the Crockpot.
Prepare the Sauce:
In a small bowl, combine the heavy cream, chicken broth, garlic, lemon juice, lemon zest, basil, parsley, red pepper flakes, salt, and pepper. Stir well to combine.
Mix Everything Together:
Pour the sauce mixture over the seafood in the Crockpot, making sure the shrimp and scallops are well-coated.
Cook:
Cover and cook on low for 2 to 2.5 hours. The shrimp should turn pink and be fully cooked. Be careful not to overcook the seafood.
Cook the Pasta:
While the seafood is cooking, bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
Finish the Dish:
Once the seafood is cooked, add the cooked pasta to the Crockpot. Stir everything together to combine the pasta with the creamy seafood sauce.
Sprinkle the Parmesan cheese over the top and stir to melt it into the sauce.
Serve:
Garnish with freshly chopped parsley and an extra squeeze of lemon if desired.
