🍠 Sweet Potato Pie
Serves: 8
Time: ~1 hour prep + baking + cooling
🛒 Ingredients
For the crust (or use store-bought pie crust):
1 1/4 cups all-purpose flour
1/2 tsp salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
3–4 tbsp ice water
For the filling:
2 cups cooked mashed sweet potatoes (about 2 medium sweet potatoes)
3/4 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup evaporated milk (or whole milk)
2 large eggs
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/2 tsp salt
🔥 Instructions
1. Make the crust (skip if using store-bought):
In a bowl, whisk flour and salt. Cut in butter until mixture looks like coarse crumbs.
Add ice water, 1 tbsp at a time, mixing until dough comes together.
Shape into a disk, wrap in plastic, and chill at least 30 minutes.
2. Prepare filling:
Preheat oven to 350°F (175°C).
In a large bowl, combine mashed sweet potatoes, sugars, milk, eggs, melted butter, vanilla, spices, and salt. Mix until smooth.
3. Roll out crust:
On a floured surface, roll out dough to fit a 9-inch pie pan. Transfer and trim edges.
4. Fill & bake:
Pour filling into crust.
Bake 55–65 minutes, until filling is set and a knife inserted near center comes out clean.
5. Cool & serve:
Let pie cool completely to set. Serve with whipped cream or vanilla ice cream.
📝 Tips & Variations
Make ahead: Bake pie a day before and refrigerate.
Sweet potato substitute: Use canned sweet potato puree (about 1 1/2 cups).
Spice it up: Add a pinch of cloves or allspice.
Crust swap: Use a graham cracker crust for a twist.
