10 minute bacon cheeseburger tacos

Ingredients for 2:
2 mini tortillas
2 bacon medallions/ low fat bacon
4 slices of gherkin (or more if you want)
130g of eat lean mince
1/2 and onion
Cajun / salt
Shredded lettuce
Sauce = ketchup
Other sauce = 1 tbsp of light mayo, 1/2 tsp of chipotle
2 squares of light cheese

Method:
1. Add a pinch of Cajun and salt to the mince and then divide it into two. Then place onto the tortillas and flatten it
2. Add the tortilla to a grease frying plan. Don’t use oil as it will make it soggy. Fry on both sides then add the cheese
3. Slice the lettuce, onion, gherkins
4. In a separate pan, fry the bacon and then slice into pieces
5. Combine the sauce Ingredients then add the salad, bacon, ketchup and the 2nd sauce on top
