One inch Pork chops, basted in butter. I've found I prefer this way instead of the grill. Look at that caramelization! 😋

Old cabin in the woods had this pan hanging on the only standing wall for 25 years . I told my kids for Christmas I wanted that pan . They laughed because us was all rusty . I brought it to the jobsite and had them sand blast it !!! Now time to season it

So, a while back I sent my brother a pic and asked him if he would make me something similar. Well, he did but it turned out SO MUCH prettier than the picture and to say that I’m proud is an understatement! Thank you Jason, this will be a treasure of mine for as long as I’m here. Your talent is unmatched. I love it and you, Jason Hamrac. ❤️

I have recently picked up a few cast irons to learn to use them and restore them. I've done a few just using a wire brush and grinder. I just discover the lye bath. What are some other way everyone cleans the pans ?

Could use some help on the hammered DO , most will probably say I spent to much but I think $50 each was ok in my book especially being Walpak is on brand I don’t see in my area

Cast iron adjacent. I have a favorite spatula. It has a crack near the rivets. These go for $40-60 on eBay. I spent hours drawing the parts in CAD. Then I found out it would cost hundreds of dollars to have a prototype cut by an online vendor. So here are my earnest attempts to do it myself. I'm not set up to work with sheet metal. They are a bit wonky, but the blade is nice and bendy like the vintage model. If you can't tell... The one on the right is the original. You can tell...
16 gauge stainless handle, 28 gauge blade. Stainless rivets and white oak handles. I did what I could with what I have in my shop.

Estate sale find today.…cheap!
I think it’s an old Lodge…maybe? Big ole thing!
Heavy as lead, sits level, no spinning or wobbling! It’s the heaviest skillet I have ever picked up! I know it’s probably nothing fancy but a fun find!
It has notches and a big engraved #10. Otherwise unmarked.
I am hoping to get that e-tank set up by Monday and give it a go! Can’t wait to start the restoration process on my cast iron pieces! Praying I don’t mess something up!
Thank you all for the continued inspiration, sharing best practices, and your willingness to help beginners!

I have seen a lot of posts and comments about different cast iron brands, what best and what's junk. It makes me smile. I am 85 years old, my grandma's and my mother used cast iron. I received my first set of three Griswold's in1955 when I married, then inherited a few more pieces from mothers collection which include a Griswold flat skillet and a Griswold Dutch Oven.
All of these are still in use and I cook whatever I want in them, wipe them out with a paper towel or soak in hot water if they get crusty, then wipe clean and oil them.
I also have Wagner's 11 & 3/4 inch and yes, I have one of those Benjamin&Medwin 8 inch pans that I love. Its a perfect size and takes a seasoning like a pro. In my experience performance depends entirely on care and seasoning. Learn your pans and don't let anyone else touch them.
the upper pan is the Griswold, bottom is that cheap little Benjamin&Medwin that I use most of the time. 🙂

Preheat your cast iron with ½ stick of butter at 425°F. While that’s heating, whisk 4 eggs, then add ¾ cup milk, ¾ cup flour, a splash of vanilla bean paste, 2–3 tbsp sugar, a pinch of salt, plus nutmeg & cinnamon (not traditional, but so good).
When the butter’s lightly browned, pull out the pan, pour in the batter, and bake 20–25 minutes until it’s beautifully puffed.
Serve it warm with berries, maple syrup, whipped cream, or a dusting of powdered sugar. This one puffed up beautifully, and I just had to share!
What do you top your Dutch baby with?
