Edible Orlando is rooted in the notion that saving room in our busy lives and tight budgets to eat a little more local food has great benefits. Buying real food from locally-owned businesses strengthens our economy, supports Florida's farmers and fishermen, and keeps us and our environment healthy. And when we sit down at the table with our friends and family - either at home or at our favorite re

staurant - we can really taste the difference. Our entire team embraces the Edible philosophy and think that our combined skills promise a dynamic, fun magazine. Publisher: Kendra Lott

Our loyal readers: Itā€™s the end of an era as we pass theĀ Edible OrlandoĀ baton ā€“ hoping that a perfect new publisher will take the award-winning magazine to even greater heights. As publisher, Kendra is beginning that search as we publish our final issue this fall. As editors, Katie and Pam are so very proud of the magazine that the three of us launched in Fall 2010 ā€“ 13 years and 54 issues ago.

As Orlando steps into its own as a food destination, we are all ready for a little more space in our lives. Kendraā€™s kiddo Lucy is graduating from high school and Kendra hopes to spend more time with her family in New York City (where her husband is based). Pam just signed a three-book deal with Disney Publishing, and Katie has her sights sets on education.

We are stepping into new adventures and feel likeĀ Edible OĀ is ready for fresh leadership. Itā€™s not easy to say goodbye, and we do it with immense gratitude to the local food community that has embraced us all, and to all the dedicated writers and photographers who have helped us tell the stories.

We are all huge supporters of everything local, and promise to continue to uplift our chefs, farmers, and artisans.Ā

We know without a doubt that Central Florida appreciates Edible Orlando, we hear it every day. And the magazine is an important voice as Orlando soars with innovative new concepts and a unique global perspective. We believe that a fresh start will take the magazine to even greater heights. The sky is the limit.

While we are surrounded by water and excellent seafood here in Florida, the one thing we donā€™t have is salmon. So when weā€™re shopping for salmon, weā€™re always keeping in mind the same thing we do when shopping for local seafood ā€” sustainability. Enter KvarĆøy Arctic Salmon, a third-generation family salmon farm in the Arctic Circle.

Weā€™ve partnered with them to create this recipe for Cured Salmon and Florida Fall Lentil Salad. If youā€™ve never cured salmon at home, nowā€™s the time to tryā€¦itā€™s much easier than you might think! And itā€™s a great, cool way to enjoy salmon considering that most fall days, itā€™s still nearly 90 degrees outside. Plus weā€™re including Florida avocado and cucumber, which are both in season in the fall months.

Find this recipe and learn more about where you can purchase KvarĆøy Arctic Salmon at www.edibleorlando.com.
