The St. Patrick's Day specials at Craft over the weekend were *chefs kiss*

☘️Reuben Egg Rolls with Thousand Island dipping sauce - perfect start to our dinner!
☘️Tender braised and char grilled short ribs with Jameson whiskey sauce, sour kraut pierogies, and honey roasted carrots - cooked to perfection!
🦞NY strip steak with lobster thermidor topping - this wasn't on special, but is becoming my husband's fave meal to order at Craft and was his chosen entrée of the night. It's a stunner! Try it out when you visit!

Happy Groundhog Day!

Unfortunately, Punxsutawney Phil saw his shadow this morning and we're in for 6 more weeks of winter ❄️

A couple years ago during a road trip to Maine, my mom and I made a pitstop to see Phil in Punxsutawney, PA to honor my late grandma. She loved Groundhog Day and the promise of spring. Considering Punxsutawney wasn't far off our travel route, this was a fun little stop to stretch our legs! Aside from the furry creature sleeping in his burrow, there are 41 fiberglass "Phantasic Phils" throughout the town! We didn't look for them all, but it was neat to see the ones we did! So, how did Groundhog Day get started in the US? "According to German lore, if the hedgehog saw his shadow on Candlemas Day, there would be a 'Second Winter' or 6 more weeks of bad weather. As German settlers came to what is now the United States, so too came their traditions and folklore. With the absence of hedgehogs in the United States, a similar hibernating animal was chosen. This leads us to yet another evolution in the legend and to present day Punxsutawney." You can read more about the history of it prior to this at www.groundhog.org!

Best Pesto Egg Sandwich Ever! 🌿

The secret to this sando is cooking your eggs in
pesto - believe me, it makes a difference! This
sandwich is cheesy, buttery, garlicky, has a hint of
spice (but you can leave that out if you choose),
fulfills that herby Italian pesto craving, is so savory,
and hits the spot every time! Have you ever cooked
your eggs in pesto before? Let me know if you try
this!

Here's how I made it:
Step 1: Garic Toast - Melt butter and minced garlic in a pan low and slow, don't burn the garlic. Once butter is melted, add ciabatta bread and cook until golden and toasted. Sprinkle red pepper on the bread.
Step 2: Sauce - Mix 2 parts mayo with 1 part pesto (l love using one with pine nuts - makes my favorite store bought one!). Slather that on your garlic ciabatta bread.
Step 3: Eggs - Place 1-2tsp pesto in your skillet. Crack 1-2 eggs on top of the pesto. When you flip the eggs, place a little more pesto for the other side of your eggs. Fry to your liking (I do over medium, the runny yolk goes perfect on this sando). Place the cooked eggs on your sandwich.
Step 4: Cheese & Assemby - Freshly grate some parmesan cheese onto your sandwich. Assemble, and dig in!

Tacos, they're a love language 😍

I had a lot of fun cooking and shooting for this UGC opportunity last week and wanted to share! I'm super proud of how the photos turned out 🥹 Better yet, I truly enjoyed the product - swipe to the end for the reveal! Within the past month, I've made homemade birria twice - once fully from scratch and once with this spice bomb. Flavor wise? Almost identical and way less effort using the spice bomb! Tip - sub beef broth in place of the water the packaging calls for. I'll definitely be making them this way again!

Easy, but fresh meal prep recipes can help combat boring desk lunches, prevent fast food stops when working on the road (like my husband), or just give you an easy item to grab from the fridge when you're hungry! One of the ones I prepped today was this jalepeño popper chicken salad, and it turned out DELISH! Would you try it? Let me know what you think in the comments!

Today, I'm wishing my husband, dad, father in law, and countless other family members and friends an extra special thank you! I'll never take the years my husband was active duty for granted as those years of our marriage gave me more than I could have dreamed: a sense of community that I have never experienced in the civilian world, friendship bonds that were fast and strong (because they had to be), the experience of living overseas, an opportunity to travel to new countries, and blossomed my love for experiencing new places through their food and traveling to beautiful sites - without which, this page would have never been created! Don't get me wrong, it wasn't all butterflies and rainbows, but that is what taught me to be independent, resilient, and adapt (even when I didn't want to). ❤️

If you're going to Trader Joe's any time soon, I highly recommend picking up this bourbon vanilla extract! I'm loving the flavor it added to my Thrive Market banana muffins and can't wait to do more holiday baking with it!
