This Chimichurri Recipe Reimagined
This version embraces the spirit of a traditional chimichurri – a vibrant blend of herbs, spices, and acidity – while allowing for customization to suit your palate. When you make this, feel free to adjust the ingredients to suit your palate.
Ingredients:
1 cup chopped cilantro
4 cloves garlic, minced
1 red chili, minced (adjust to your desired heat level)
1/4 cup red wine vinegar
1/2 cup olive oil
1 lime juiced
½ shallot finely minced
Salt and pepper to taste
Instructions:
Combine Ingredients: In a bowl, combine all ingredients.

One more thing: Add cream after the cheese has started to melt so you don't add too much in the beginning. You need to reserve adding liquid since your veggies will be producing some liquid naturally. Ask for the recipe.

Chuck short ribs(NOT DINO RIBS) cooked on the Oklahoma Joe's Bronco pro drum smoker using B&B Charcoal oak lump charcoal and mesquite wood chunks. Cooked at 250-275 until the internal temperature is around 190°F and then wrapped for the finish which is probe tender. Rested for 1 hour and then carved. How do you like this cook?

Used up some brisket trimmings for barbacoa and made some bangin tacos. Made a roasted pineapple scotch bonnet salsa and guac as well. Family loved every morsel.
