Like many new bakers, I was told a 1:1:1 ratio was the best for maintaining my starter. The truth is, it’s not ideal to use this ratio for a long period of time.

A 1:1:1 Ratio is best reserved for building a brand new starter from scratch or giving a quick, same-day boost right before baking.

Higher Ratios (1:3:3 higher) are best for routine maintenance.

When I first started my microbakery three years ago, I had no idea where it would go. I just knew I loved making bread and I loved teaching others how to make it too.

I often feared I wasn’t doing enough because I wasn’t producing 100+ loaves a week - I feared I would fail, my business wouldn’t survive and eventually I’d have to go back to the corporate world. And when I felt like I was finally doing “enough” it became too much.

The truth is, sometimes you feel like you’re not doing enough... not moving fast enough, not accomplishing enough, not where you thought you’d be by now.
But take a moment to look at how far you’ve come.

You’re showing up. You’re trying. You’re growing, even on the days when it doesn’t feel like it.

You don’t have to have everything figured out to be making progress.
You don’t have to constantly be achieving to be worthy of being proud of yourself.

You are doing enough. You have always been enough.

Give yourself the same grace you so freely give to everyone else. 🌱 💫
