Greetings everybody! It's been a while I know! For the last 2 months I have been experimenting with banana bread and I think I finally figured out the recipe I like! Baking has been very therapeutic. Here is the recipe so you can try it at home! I don't mean to toot my own horn, but toot toot!
Ingredients:
3 ripe organic bananas, mashed
1/3 cup melted organic butter
1 teaspoon organic baking soda
Pinch of salt (organic pink Himalayan)
3/4 cups of organic palm sugar (you can reduce this if you prefer less sweetness)
2 tablespoons of raw organic monk sugar
2 organic eggs, beaten
1 teaspoon vanilla extract
1 1/2 cups organic all-purpose flour
Half a disc of Ibarras Mexican hot chocolate
1 tsp of organic nutmeg
1/2 a cup of raw organic walnuts
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, mix the mashed bananas with the melted butter.
3. Stir in the baking soda and salt.
4. Add the sugar, beaten egg, and vanilla extract, and mix well.
5. Gently fold in the flour until just combined.
6. Pour the batter into a greased 4x8 inch loaf pan.
7. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Pairs well with Mexican hot chocolate!
