🧡 Butter Chicken (Murgh Makhani)
🛒 Ingredients:
For the Chicken Marinade:

500g boneless chicken (cut into cubes)

1 cup plain yogurt

1 tbsp lemon juice

1 tbsp ginger-garlic paste

1 tsp turmeric powder

1 tsp red chili powder

1 tsp garam masala

Salt to taste

For the Sauce:

2 tbsp butter

1 tbsp oil

1 medium onion (finely chopped)

1 tbsp ginger-garlic paste

1½ cups tomato puree

1 tsp red chili powder

1 tsp garam masala

1 tsp cumin powder

½ tsp coriander powder

½ cup heavy cream

Salt to taste

1 tsp sugar (optional)

Fresh cilantro (for garnish)

👩‍🍳 Instructions:
1️⃣ Marinate the Chicken

Mix yogurt, lemon juice, spices, and salt.

Add chicken and coat well.

Cover and refrigerate for at least 1 hour (overnight is best).

2️⃣ Cook the Chicken

Grill, bake (400°F / 200°C for 20 minutes), or pan-fry until cooked and slightly charred.

Set aside.

3️⃣ Make the Sauce

Heat butter and oil in a pan.

Sauté onions until soft and golden.

Add ginger-garlic paste and cook 1 minute.

Stir in tomato puree and spices. Cook until thick and oil starts separating.

4️⃣ Combine

Add cooked chicken into the sauce.

Simmer for 8–10 minutes.

Stir in heavy cream and sugar (if using).

Cook 2–3 more minutes until creamy and rich.

5️⃣ Garnish & Serve

Sprinkle chopped cilantro on top.

Serve hot with basmati rice and warm naan bread.

🌿 Chicken Avocado Lettuce Wraps

Ingredients

2 chicken breasts, diced (or thighs for juicier bites)

1 cup cooked white rice

1 ripe avocado, diced

1 head butter lettuce or romaine (whole leaves)

2 tbsp olive oil

For the chicken seasoning

1 tsp paprika

½ tsp garlic powder (or fresh garlic)

½ tsp black pepper

½ tsp salt

1 tbsp soy sauce (or tamari)

1 tsp honey or brown sugar (optional, for caramelized flavor)

Optional: chili flakes or sriracha for heat

🍳 How to Make It

Cook the rice
Make plain white rice and set aside warm.

Cook the chicken
Heat olive oil in a pan over medium-high heat.
Add chicken, season with paprika, garlic, salt, pepper.
Cook until golden and slightly crispy (6–8 minutes).
Add soy sauce + honey, toss and cook 1 more minute until glazed.

Prep lettuce & avocado
Wash lettuce leaves and pat dry.
Dice avocado.

Assemble wraps
On each lettuce leaf:

Add a spoon of rice

Top with chicken

Finish with avocado chunks

Ingredients
For the Chicken

2 boneless, skinless chicken breasts

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp Italian seasoning

1 tbsp olive oil

For the Pasta

300g pasta (penne, fettuccine, or spaghetti)

Water for boiling

1 tsp salt

For the Sauce

4 tbsp butter

4 cloves garlic (minced)

1 cup heavy cream

1 cup milk

1 cup grated Parmesan cheese

1 tsp Italian seasoning

½ tsp salt (or to taste)

½ tsp black pepper

1 cup spinach (optional)

1 tbsp chopped parsley (for garnish)

Instructions
Step 1: Cook the Pasta

Boil water in a large pot.

Add salt and pasta.

Cook until al dente (usually 8–10 minutes).

Drain pasta and keep ½ cup pasta water aside.

Step 2: Cook the Chicken

Cut chicken breasts into bite-sized pieces.

Season with salt, pepper, garlic powder, and Italian seasoning.

Heat olive oil in a pan over medium heat.

Add chicken and cook 5–7 minutes until golden brown and fully cooked.

Remove chicken and set aside.

Step 3: Make the Creamy Sauce

In the same pan, add butter and let it melt.

Add minced garlic and sauté for 1 minute.

Pour in heavy cream and milk.

Stir well and let it simmer for 2–3 minutes.

Add Parmesan cheese, Italian seasoning, salt, and pepper.

Stir until the cheese melts and the sauce becomes thick.

Step 4: Combine Everything

Add cooked pasta and chicken into the sauce.

Mix well to coat everything evenly.

If the sauce is too thick, add a little pasta water to adjust consistency.

Add spinach (optional) and let it cook for 1 minute.

Step 5: Serve

Garnish with chopped parsley and extra Parmesan.

3–4 medium potatoes (peeled & chopped)

2 tbsp butter

¼ cup milk (warm)

Salt to taste

Black pepper (optional)

Fresh parsley (for garnish)

For Fresh Salad

Lettuce leaves

1 cucumber (sliced)

1 carrot (julienned)

1 tomato (sliced)

Salt & lemon juice (to taste)

Olive oil (optional)
