Come spend a slow, cozy morning in the kitchen with me while I make one of my favorite breakfast soups. This shrimp rice noodle soup is light, comforting, flavorful, and honestly perfect for chilly mornings in Philly.
Simple ingredients, warm broth, soft noodles, fresh bok choy, and a little razzle dazzle on top 💛

Cozy Breakfast Soup 🍜✨
Serves 1–2
Ingredients:
3 cups water
1 pack rice noodles
6–8 shrimp, peeled & deveined
1–2 baby bok choy, chopped
1–2 tsp Just Shanae All Purpose Seasoning (or seasoning of choice)
1 tsp granulated bullion
1 soft boiled egg (optional)
Toppings/Garnish:
Sliced scallions
Chili crunch
Hoisin sauce
Red pepper flakes or sliced red peppers
Instructions:
Bring the water to a gentle boil in a medium pot.
Season the broth to taste.
Add the rice noodles and cook according to package instructions.
Add the shrimp and bok choy. Cook for about 2–3 minutes, or until the shrimp are pink and fully cooked and the bok choy is tender.
Pour into a bowl and top with scallions, chili crunch, hoisin sauce, and red pepper.
Enjoy warm and cozy ✨🍜
You can also add mushrooms, thin ribeye, spinach, or dumplings if you want to switch it up 💛
