Quick and Healthy Rice and Shrimp Dinner
Ingredients for Rice and Shrimp
4 cups of raw Prato Fino rice
2 teaspoons of saffron
8 cups of beef broth
12 clean medium shrimp
200g of mozzarella
100g of capers
1 cup (tea) extra virgin olive oil
2 sprigs of lettuce for garnish
2 sliced tomatoes for garnish
1 tablespoon chopped onion
How to prepare Rice and Shrimp:
Fry the onion in two tablespoons of oil, let it brown and add the rice.
Cook for a few minutes, adding the beef stock all at once with the saffron, keeping it semi-muffled.
Fry the prawns, previously cooked, in blades; cut the mozzarella into cubes.
Combine all ingredients in a salad bowl.
Add the cold rice and mix.
Serve on a large plate over lettuce leaves and garnish with tomato slices.
