There are so many pictures I could post to celebrate today, this one feels right as we don’t take things too serious, just have fun, enjoy life, cherish our relationship, grateful we found each other and of course raising 2 amazing boys together. Reverse Sear Smoked Steak
1) set Traeger at 225 degrees, pecan wood. Let steak set at room temp while smoker heats up
2) 20oz New York Strip from . Sergio Seasoning from
3) Smoke for 1 hour, turn after 30 minutes. Internal temp reached 120
4) Traeger Flatrock griddle on high with some beef tallow on griddle. Sear steak for 1.5min per side. Finish steak by searing fat cap.
5) We used a meat press for consistent contact on griddle
6) Steak ended at 130 degrees internal
7) Slice it and enjoy. Big steak, leftovers w eggs for breakfast

Last night we made a quick dinner with 2 things we love and eat often…..Chicken Cutlet and Caesar Salad. Decided we might as well film it but long day at work and did not feel like talking. Recipe below….

Caesar Salad
-1/2 C Olive Oil
-2 Cloves Garlic
-1 Egg, yes raw
-1/2 C Parmesan
-Juice 1 Lemon
-Anchovies, whole or paste to taste
-1 T Worcestershire
-1/2 T Dijon Mustard
-1/2 t Salt
-1/2 t Black Pepper
-1-2 Heads Romain Lettuce
-Croutons is you wish
**Big Wooden Bowl, add salt and garlic, make a paste
**Add anchovy, egg, Worcestershire, lemon juice and mustard while steadily whisking. We just keep the fork moving the whole time
**Slowly add Oil while mixing
**Add pepper and parm
**Drop in a head of Romaine Lettuce cleaned and roughly chopped, mix well, add shredded parm on top

Chicken Cutlet
**Thinly sliced Chicken Breast seasoned with Salt and Pepper
**3 Part dredge 1) Flour 2) Egg Wash 3) Panko….season flour with salt and pepper…..season panko with italian seasoning and Parmesan cheese
**Heat oil to 375 ish and cook for about 2 minutes on each side until they are done

Serve it up together and you have a great weeknight meal in less than 30 minutes.

Been following Salt Hank for a long time and was quick to get his cookbook. Charred Red Salsa hits just right! I added the Chile de Arbol as I like it spicy. If you do not follow him, go check it out and grab his cookbook. Worth your money if you love great food!
