My Grandmother grew up in Goldsmith Texas, just outside Odessa/Midland. She made this at Christmas every year. My Mom makes it every year. We now make it every year. Tradition! She called it Texas Munchin. If you like traditional Chex Mix, give this a shot, hope you love it! Recipe below

-Large Box Rice Chex, Corn Chex, Wheat Chex.
-Large Bag Pretzel Sticks
-Large Container Mixed Nuts, salted
-2-4 Bags Pork Rinds, plain, not pre seasoned
-8 Sticks of Butter
-1/2C Bacon Grease/Fat, we used Bacon Up
-6T Worcestershire Sauce
-Hot Sauce of choice, we do a couple T give or take
-3.5T All Spice
-3T Garlic Powder
-2tsp Seasoned Salt
-1tsp Cayennne

*Medium Sauce Pan on Med/Low heat. Melt Butter w Sauces and Seasonings above
*We use 2 big foil pans. Equally distributed dry ingredients above
*Pour butter mixture over the top and mix well
*Both pans in Oven at 235 degrees for 6 hours, mix every hour
*Turn oven off and let sit over night
*We put in small Christmas boxes and give to friends
*Keeping the container shown for us.
*Best with a Diet Coke IMO. Enjoy

CHICKEN and WHITE BEAN SOUP. A bit of work, but 2 hours total in prep and cooking and it was done. Worth your time! Recipe below

-2lbs Chicken Breast, cubed
-1 Red Bell Pepper, diced
-1 Yellow Onion, diced
-1 Poblano Pepper, diced
-3 Celery Stalked, diced
-1C Roasted Corn, frozen
-2 Jalapeños, diced no seeds
-3 Gloves Garlic, minced
-4oz Roasted Green Chile
-1 Stick Butter
-3/4 C Flour
-1 Pint Heavy Cream
-32oz Chicken Stock
-2 Cans White Kidney Bean, rinsed drained
-1T Cumin
-1/2T Onion Powder
-1/2T Garlic Powder
-1T Chili Powder
-1/4tsp Cayenne
-1/4tsp Green Chile Flakes or Powder
-Salt and Pepper to taste
-1/4C Cilantro, chopped
-Olive Oil

**Dutch Oven (we used 9 3/4qrt) medium heat
**Add Olive Oil and drop in chicken w S&P, cook for 3-5 minutes max
**Add all vegetables, green chile and garlic, cook until tender, less than 10 minutes
**Add Butter and let it melt
**Add flour and incorporate well to all is coated
**Add heavy cream. Half of it, whisk well, add the rest, whisking
**Add chicken stock about 8oz at a time, whisking
**Add beans and seasoning, whisk
**Reduce heat to a simmer and cook at least 1 hour, stirring often, every 10 minutes at least
**Drop in cilantro at end and serve, we had some cornbread on the side

The Creamiest Mac and Cheese from Pioneer Woman’s new cookbook. This now replaces every thing I have tried in the past! This was a test cook for Thanksgiving day and will be on the table this week. Have a great Sunday! See Recipe below from Ree Drummond. Do yourself a favor and order her new cookbook!

-3C Whole Milk
-3T Salted Butter, plus a bit more to butter baking dish
-2 Egg Yolks
-8oz Sharp Cheddar, grated
-8oz White Cheddar, grated
-8oz Colby Jack, grated
-6oz Mozzarella low moisture, grated
-1/2C Parmesan, grated
-8 Slices American Cheese, we used Kraft Deluxe, cut up
-6oz Mozzarella small balls, low moisture
-1/2tsp Paprika
-1tsp each Salt & Pepper
-1lb Pasta, we used Cavatappi. Elbow is great obviously

**Preheat Oven on Broil, use lowest rack
**Heat milk on Med-Low in saucepan, bring to gentle boil
**Stir in the butter and turn off heat. Whisk
**Whisk 2 egg yolks, add 2-3T of warm milk, keep whisking and add to saucepan
**Grate your 1.5lbs of Cheddar, White Cheddar, Colby Jack, divide into 2 equal parts
**In a blender, 1 part of Cheese Mix, grated Mozz, grated Parm, American Cheese slices, paprika, S&P
**Carefully pour warm milk into blender
**Blend on low setting for about 30 seconds
**Cook pasta to al dente and move to large mixing bowl
**Pour cheese sauce over top, taste and adjust seasoning as you wish
**Butter a 9x13 baking dish, add half the mac n cheese mix
**Add 2nd part of grated cheese and layer in some small mozz balls
**Layer in rest of mac n cheese mix, top with more grated cheese and mozz balls
**Broil for 10-12 minutes and keep an eye on it
**Serve immediately just don’t burn your mouth

Creamy Mushroom Pasta for the win! My wife buys me cookbooks often and recently gave me Italianish by Danny Freeman …. We have made a few recipes from the book and they have all been great. Decided to film this one. Outstanding meal! Recipe below

-1lb Pasta of Choice, we used Barilla Al Bronzo Fusilloni
-6T Butter
-1lb Mushrooms, we used Baby Bella Sliced
-1/2tsp Salt, plus more as you wish
-1/4tsp Pepper, plus more as you wish
-4 Cloves Garlic, minced
-10oz Chicken Broth, we used Kettle & Fire Mushroom Chicken Bone Broth
-1C Heavy Cream
-2T Corn Starch
-1/2C Parmesan, shredded
-1/2C Fresh Parsley, chopped
-Juice Half of a Lemon

**We used a 12” Made In Sauce Pan, Medium Heat
**Add 2T Butter, melt
**Add Mushrooms and stir well to coat
**Season w S&P, cook 9-10 minutes until moisture from shrooms evaporate, stir well and do not burn, reduce temp if needed
**Add 4T Butter plus garlic, mix well
**Add Broth
**Mix Heavy Cream w Corn Starch, whisk well and add to sauce, cook about 5 minutes
**Good time to cook your pasta
**Add Parmesan mix until melted
**Let sauce thicken while pasta cooks
**Add Pasta to sauce, add parsley/lemon juice, turn heat off, bring it all together
**Enjoy

Loaded Baked Potato Soup is a classic we make a couple times a year. When we make soup I often head to for inspiration, she is an incredible follow! Recipe below

-3lb Small Yukon Gold Potatoes, cut to small bites
-12oz Bacon, chopped
-2T Butter
-1 Yellow Onion, diced
-5 Cloves Garlic, minced
-1/3C All Purpose Flour
-1C Heavy Cream
-2C Whole Milk
-4C Chicken Broth
-1T Salt & Pepper, give or take
-1tsp Cayenne, give or take
-1tsp Chicken Bouillon
-2C Sharp Cheddar Cheese, shredded
-1 Bunch Green Onions, chopped
-Garnish w Bacon, Cheese, Green Onion, Sour Cream

**7 1/4Qt Dutch Oven, Medium Heat
**Cook Bacon about 12 minutes, set aside
**Remove most of bacon grease, add butter
**Add Onion, scrape up flavor, cook about 5 minutes
**Add Garlic, mix up, add flour, cook a few minutes
**Add Heavy Cream, cook 1-2 minutes
**Slowly add Milk while stirring
**Slowly add Chicken Broth while stirring
**Season w S&P plus Cayenne
**Add Chicken Bouillon
**Add Potatoes, boil for 10 minutes or so, simmer until potatoes are soft, 30 minutes
**Add Bacon, Cheese, Green Onions, mix well. Heat Off
**Garnish as you like and enjoy

Million Dollar Spaghetti has been around awhile and there are many methods to make it. This was my first shot, recipe below with adjustments I will make next time. Week night winner that will last a few days, easy. Have a great weekend.

-1lb Ground Beef
-1lb Spicy Italian Sausage
-1 White Onion, diced
-5 Cloves Garlic, minced
-1-2T Tomato Paste
-24oz Favorite Tomato Sauce. 32oz next time
-1lb Pasta, spaghetti
-12oz Ricotta
-8oz Cream Cheese, softened
-1/2C Parmesan, shredded
-1 Raw Egg
-1T Rosemary, fresh, finely chopped
-2T Basil, fresh, finely chopped
-Salt, Pepper, Italian Seasoning, Red Pepper Flakes…..all to taste, did not measure
-4T Butter
-12oz Mozzarella, sliced or shredded. Will do all shredded next time

**12” Cast Iron Skillet, Medium Heat, Olive Oil
**Add Onion, 4-5 min
**Add Garlic and Tomato Paste to middle, cook a few minutes. Bring together
**Add seasonings
**Add meat and sausage, brown 8-10 min
**Add Tomato Sauce, simmer 15 minutes, taste it and adjust seasoning as needed.
**Good time to cook pasta
**Cheese mix….Ricotta, Cream Cheese, Parm, Basil, Rosemary, Salt in bowl, mix and chill
**13x9 Casserole Dish, add butter to bottom of dish. Add half of cooked pasta
**Spoon over some meat sauce and mix well
**Add cheese mix, smooth over
**Add rest of pasta
**Add meat sauce, smooth over
**Add mozzarella on top
**Cover in 350 degree oven, 20 minutes
**Uncovered another 20 minutes
**Broil last 2-3 minutes if needed
**Cool for 5 minutes or so and serve

CREAMY WILD RICE and MUSHROOM SOUP

My wife found this recipe from and we had to try it, by the way we will be trying more recipes from her website, everything looks incredible. RECIPE BELOW…..have a great weekend!

-4 T Butter, we used salted
-4 T Olive Oil
-1 LB Mushrooms. We used equal mix of Oyster, Shiitakes and Portabella. Slice em thinly
-1 T Worcestershire Sauce
-1 Small Yellow Onion, diced
-1 C Carrots, diced
-1 C Celery, diced
-6 Cloves Garlic, minced
-1 tsp of each Paprika, Dried Thyme, Dried Oregano, Rubbed Sage, Dried Dill
-1/2 tsp pepper
-1/4 tsp Red Pepper flakes
-1/4 C Flour
-1 C uncooked Wild-Brown rice blend
-2 T Beef Base
-6 C Water
-2 C Half and Half
-1 T Balsamic Vinegar
-Juice of 1 Lemon, or a bit less

***Follow steps in video and enjoy!

White Chicken Chili in the Crock Pot is about as easy as it gets and this recipe I found from hit just right. Recipe below….make it! Have a great week!

RECIPE
-1.25lb Boneless Chicken Thighs
-10oz Green Chili Enchilada Sauce
-8oz Hatch Green Chile
-2 Cans White Beans
-2 Cups Fire Roasted Corn
-1 tsp Oregano
-1 tsp Paprika
-1 T Chili Powder
-1 T Cumin
-S&P to Taste
-2 C Chicken Bone Broth
**Dump it all in Crock Pot on High for 4+ hours, pull chicken out and shred, dump it back in
-Add 8oz Cream Cheese softened
**Turn heat to Low for another hour or so
-Add Cilantro, we did a small amount for some color and pop of flavor
-Juice of 1 Lime
-Serve it up and use toppings of your choice. We like Cheddar Cheese, Sour Cream and crushed up tortilla chips.
