Dinners I’m cooking for my family this week.
We are in the thick of sports season with practice every day and games every weekend ⚽️🤪
I need easy dinners that can be at my table in under 30 minutes.
MONDAY
TERIYAKI SALMON BOWLS
This salmon is so easy to make! The ingredient list is short and it is so versatile. I love serving mine with pickled onions, avocado-cucumber salad and rice.
TUESDAY

WEDNESDAY
QUICK CHICKEN ENCHILADAS
If you want extra quick chicken enchiladas, all you need is frozen chicken taquitos, enchilada sauce (green or red) and toppings. Ready in 20 minutes.
THURSDAY

I always have a bag of frozen shrimp in my fridge for those nights that require something quick yet nutritious. I love the Argentinian Red Shrimp from Trader Joe’s to make this orzo.
