"Milestone Moments" is today’s Senior Sunday theme.

Allen has always loved reading! As a baby he wanted to be read to and he would pick up books to play with. By age three, he was reading early readers on his own. Our first year homeschooling he tested 4 full grade levels ahead of his then age group of 1st grade. He has not changed, when he took his ACT Test he got a 36, placing him in the top 1% of the nation.

It's Food Friday here in our RV!

Story time: I am teaching the teen how to cook meals that will actually feed people, not just make a snack for one as he gets ready to head off to university.

This week's lesson: Easy Chicken Pot Pie.

And when I say easy, I mean teenager easy.
We grabbed 2 pie crusts, a bag of frozen diced chicken, a bag of frozen peas and carrots, 2 packets of chicken gravy, 1 cup of water, and a little salt, pepper, and poultry seasoning.
That's it! No chopping, no fussing, no complicated recipes.

Dump, stir, pour it in the crust, top it, bake it and suddenly you've got a golden, bubbly pot pie that feeds 4-6 people. It’s kitchen magic.

The best part? We priced it out at Walmart and even including buying the salt, pepper, and poultry seasoning, the whole thing came in under $25.

Almost homemade, super budget-friendly, and a teen can totally make it on their own.

Who else is teaching their kids these "feed a small army" meals? What should we try next Friday?

“It’s gotta be so lonely? Moving all the time, never getting yo stay long enough to get rooted in a community?”

A common misconception is RVers miss out on community… it is true it is harder to build but I can tell you community is right in your next campground, or right now in the campground you are at today.

Community, my RV community is why after almost 9 years I cannot imagine “settling down” and know the fulltime RV community is where I want to be!
