Veggie Scramble 🥚🥬
From my book 100 Healthy Recipes
A quick, healthy, and protein-packed meal you can make in minutes.
Ingredients:
• 2 eggs
• Splash of milk
• 1 tbsp oil
• 1/4 diced onion
• Handful of spinach
• 1/4 chopped tomato
• Salt & pepper
Method:
Heat oil and sauté the onion for 2 minutes.
Add tomato and spinach, cook for 1 minute.
Pour beaten eggs and scramble for 1–2 minutes.
Simple. Clean. Healthy.
