One of our favorite meals is a Mississippi pot roast (you can also do it with chicken) 🥰

For the roast:
•1 roast
•5-7 pepperoncini peppers
•1 au ju gravy packet OR Mississippi pot roast packet (same thing but the pot roast one has the directions on the back)
•1 stick of butter (optional)
•Cook on low for 8 hours or high for 6 in a crockpot

Mashed cauliflower:
• cut up 1 head of cauliflower into florets
• cover florets with water and cook uncovered to a boil (once boiling, COVER and cook for about 10 mins or until tender)
• drain & return to pot
• mix about 1 tbs of cream cheese, salt & pepper to taste, and cheddar cheese (optional)
• serve under the roast 😍

We don’t know how this started she’s always enjoyed this 😂 luckily she’s only 20 lbs so she is easy to lug around🙌🏽

A lifetime of thank-you’s to supermotocross for having us and everyone else who made it possible for allowing us to ride on the track. I completed a bucket list event that I never even thought was possible, and to do it at the coliseum made it even that much better!
