KICKASS HARVEST SALAD

KICKASS: post/recovery

Servings: 6

Serving Size: ≈2½ cups

Macros (per serving):
protein 30g | fat 14g | carbs 48g | calories 429

Ingredients:
• 1 large sweet potato, diced
• 2 cups brussels sprouts, halved
• ½ red onion, sliced
• 3 tbsp pumpkin seeds
• 1 tbsp olive oil
• 1 lb shredded chicken
• 1 cup quinoa, dry
• 2 cups kale, chopped
• 1 apple, chopped
• ¼ cup apple cider vinegar
• 1½ tbsp honey
• ¼ cup tahini
• ½ cup nonfat Greek yogurt
• 2 garlic cloves, minced
• Water, as needed for thinning
• Seasonings: 2 tsp paprika, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp cumin, ½ tsp salt, ½ tsp pepper, plus ¼ tsp salt and black pepper for the sauce

How To Make It:
1. Preheat the oven to 400°F.
2. Cook the quinoa per the package directions.
3. Toss the diced sweet potato, halved brussels sprouts, and sliced red onion on a baking sheet with the pumpkin seeds, olive oil, paprika, onion powder, garlic powder, cumin, salt, and pepper. Roast 25 to 30 min, tossing halfway, until golden and tender.
4. Make the sauce: whisk the apple cider vinegar, honey, tahini, Greek yogurt, garlic, salt, and black pepper. Add water slowly until creamy and pourable.
5. Combine the roasted veggies, quinoa, kale, apple, and shredded chicken in a large bowl. Drizzle with the tahini sauce, toss, and serve.

Macros (per serving):
protein 7g | fat 3g | carbs 3g | calories 62

Ingredients:
• ½ cup 4% cottage cheese
• ½ cup 5% Greek yogurt
• 1 garlic clove
• 2 tbsp fresh dill
• 1 tbsp green onion
• 1 tbsp lemon juice
• Water, as needed
• Seasonings: ¼ tsp salt, ¼ tsp pepper

How To Make It:
1. Add everything to a blender, yogurt and cottage cheese first so it blends easier.
2. Blend until completely smooth.
3. Taste and adjust. If it’s too thick, add a splash of water or more lemon juice and blend again to your preferred consistency.

KICKASS BLUEBERRY MUFFINS

KICKASS: pre/post

Servings: 12

Macros (per serving):
protein 10g | fat 3g | carbs 23g | calories 158

Ingredients:
• 2 ripe bananas, mashed
• 1 cup nonfat Greek yogurt
• 2 eggs
• 3 tbsp maple syrup
• 1 tbsp apple cider vinegar
• ½ tsp pure vanilla extract
• 2 cups blueberries, fresh or frozen
• 2 cups oat flour
• 2 scoops vanilla protein powder (½ cup)
• 2 tsp baking powder
• 1 tsp baking soda
• Seasonings: 2 tsp cinnamon, 1 tsp salt

How To Make It:
1. Preheat the oven to 350°F (175°C).
2. Whisk all the dry ingredients together in a large bowl.
3. Mash the bananas in a separate bowl.
4. Whisk in the Greek yogurt, eggs, maple syrup, apple cider vinegar, and vanilla until fully combined.
5. Mix the wet into the dry just until combined. Fold in 1½ cups of the blueberries, saving ½ cup for topping.
6. Line a muffin tin with liners and spray lightly with avocado or olive oil.
7. Scoop the batter evenly into 12 cups and top each with a few of the remaining blueberries.
8. Bake 12 to 15 min, until the tops are golden and a toothpick comes out clean.
9. Cool 10 min before removing. This helps them firm up and release from the liners.

KICKASS CHEESECAKE

KICKASS: post/recovery

Servings: 12

Macros (per serving):
protein 15g | fat 7g | carbs 38g | calories 275

Ingredients:
• Crust: 3 cups oat flour, ¼ cup honey, 3 tbsp coconut oil, 2 eggs
• Filling: 2 eggs, 2 cups nonfat greek yogurt, 2 cups 2% cottage cheese, ¼ cup maple syrup, 1 tsp vanilla extract, 1 tsp lemon zest (optional)
• Raspberry sauce: 2 cups frozen raspberries, 2 tbsp honey
• Seasonings: 1 tsp cinnamon, ½ tsp salt

How To Make It:
1. Heat the oven to 350°F.
2. Blend the crust ingredients in a food processor until well combined, or mix thoroughly by hand. Press the dough firmly into a springform pan, compacting it evenly.
3. Blend the filling ingredients until smooth and pour over the crust.
4. Bake 28 to 30 min, until set.
5. Turn off the oven and crack the door. Let the cheesecake sit inside 30 min so it doesn’t crack.
6. Move it to the fridge and chill completely.
7. Cook the raspberries and honey in a saucepan over high heat, stirring, until jammy. Cool slightly, then spoon over the cheesecake.

BEEF GINGER NOODLE BOWL

KICKASS: post/recovery

Servings: 5

Macros (per serving):
protein 31g | fat 15g | carbs 32g | calories 378

Ingredients:
• 1 medium green cabbage, thinly sliced
• 1 medium onion, thinly sliced
• 1 tbsp fresh ginger, minced
• 2 garlic cloves, minced
• 2 tsp olive oil
• 1 lb ground beef, 90/10
• 2 cups shelled edamame
• ¼ cup soy sauce
• 112 g udon noodles, dry
• Optional: green onion, sliced, for topping
• Seasonings: 2 tsp paprika, 1 tsp salt, ¼ tsp black pepper

How To Make It:
1. Heat the olive oil in a large pan or wok over medium-high. Add the sliced cabbage and onion and sauté.
2. Add the ginger, garlic, paprika, salt, and pepper. Sauté until the vegetables soften, about 5 min.
3. Add the ground beef and cook, breaking it up, until browned and cooked through.
4. Once the beef is in, cook the udon in a separate pot per the package directions, then drain.
5. Add the edamame and soy sauce and stir until combined and the edamame is heated through.
6. Add the drained udon and toss until fully combined.
7. Top with sliced green onion. One serving is about 1½ cups.

Fresh fruit from the market to make this beautiful yogurt bowl. What could make it better? KICKASS Granola.
