Buffalo Chicken & Chickpea Salad

Salad Ingredients:
24 oz cooked chicken breasts, diced
6 oz pepper jack cheese, finely diced
1 (16 oz) can chickpeas, drained and rinsed
1 (16 oz) jar roasted red peppers packed in water, diced
4 stalks celery, diced

Dressing Ingredients:
1 1/2 cups 0% Greek yogurt
3/4 cup Frank’s Buffalo Wing Hot Sauce
1 (1 oz) packet ranch seasoning
OR
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
2 tbsp dried chives
1 tbsp dried dill
Diamond Crystal kosher salt, to taste
Water, as needed to thin

Yields: 5 large servings, 7-8 side portions

Creamy Jalapeño-Basil Edamame Spread

For some reason whenever the warm weather rolls around, all I want do is park my ass on my balcony and eat chips and dip… so this week I’m bringing you a blended Creamy Jalapeño-Basil Edamame Spread to munch on all week long.

It’s PACKED with protein and fiber, and it’s incredibly easy to toss together. Just add some frozen kale and frozen edamame to your food processor along with a hot pepper, some garlic, and a few other odds and ends. It legitimately takes under 10 minutes to make, including the dishes.

Yields: Slightly less than 1 quart
Ingredients:
* 1lb frozen, shelled edamame (455g frozen edamame)
* 2 1/2 heaping cups frozen chopped kale (190g)
* 1 JAM PACKED cup fresh basil
* 2 garlic cloves
* 1-2 jalapeños, seeds removed
* 2 tsp white miso paste (17g)
* Zest & Juice from 1 large lemon, plus additional juice to taste
* 1/4 cup olive oil (60ml, 55g), plus additional as needed
* Salt, to taste

What is a Vermont Sap Dog?

During Vermont maple open house weekend, over 80 sugaring houses in open their doors to the public and it’s basically a giant party across the entire state. It was SO much fun; tons of live music, snacks, demonstrations, and yeah… SO many sap dogs hahaha.

Just to clarify the cooking process a bit further: I spoke to two of the farm owners and they said most farms typically take their finished maple syrup and dilute it with water to make the cooking liquid (as opposed to cooking down the sap to certain level directly).

The best hot dog I found was hands down Shout out the owner Michelle and the sap dog savant Sawyer for letting me jump behind the counter and film while they were in the weeds with a line 50 people deep.

Other farms I featured in my video were who had an incredible wood fired evaporator and sugar on snow, who had a great band playing (that’s what I used for the music in the video), and who had the jumbo sap dog.

Fire Roasted Tomato Couscous

Roasted Tomato Lentils Ingredients:

* 1 tbsp olive oil (12g)
* 4 garlic cloves, minced
* 1 small yellow onion, diced
* 1 tbsp tomato paste (15g)
* 1 15oz can diced fire roasted tomatoes
* 1 tbsp dried oregano (large pinch)
* 2-4 tsp ancho chili powder, to your heat preference (small or large pinch)
* 1 cup dry pearled couscous, rinsed (170g)
* 1 1/4 cups unsalted chicken bone broth (or veggie stock/water) (295g)
* 6 soft boiled eggs (boiled for 9 minutes) this gives 2 eggs per bowl
* Fresh mint, sumac onions, fresh cracked pepper, and extra olive oil to finish (all optional)�
Quick Pickled Sumac Onion Ingredients:
* 1 small red onion
* 1/4 tsp diamond crystal kosher salt (tiny pinch)
* Juice from 1/2 a lemon
* 2 tsp ground sumac (small pinch)

Creamy Garlic-Lemon Chickpeas

Ingredients

* 1 tbsp olive oil (15ml)
* 3-4 shallots depending on size, minced
* 6 cloves of garlic, minced
* 1 tsp miso paste (5g)
* 1-3 tbsp red pepper flakes, to preference (4-12g)
* 2 16oz cans of chickpeas, drained & rinsed (2 450g cans)
* 1 cup heavy cream (235ml)
* 1 cup chicken bone broth or veggie (235ml), plus additional as needed
* 2 tbsp nutritional yeast (22g)
* Zest & juice from 1 lemon
* Lots of fresh cracked pepper and a little salt to taste
* Fresh parsley & basil to garnish

If you go on a Friday, get the big fish sandwich. Only available one day out of the week though.

Other things you can’t leave the store without trying:

The focaccia bread. My god, the focaccia bread. Get any flavor you eat.
While you’re in the bakery grab like 2 pounds of cookies.

The house made fresh mozzarella.

And finally you’ve gotta rub elbows with regulars at the espresso bar, there’s some real characters there. Get a double espresso and eat it with a cookie from the bakery.

Everything Bagel Crusted Salmon Black Rice Bowl

SPRINGS IS HERE and I’m celebrating it with this everything bagel crusted salmon and caper-parsley salad served over organic black pearl rice. Everything comes together in just a handful of minutes, so you have plenty of time to enjoy the sunshine :)

Lundberg Farms’s organic black pearl rice is a STUNNING shade of purple, plus it’s packed with all the good stuff like fiber and antioxidants.

Everything Bagel Crusted Salmon
4 six oz center cut salmon filets
2 tbsp honey�¼ cup olive oil�Everything bagel seasoning

Parsley Salad�1 large bunch of parsley, roughly cut & twiggy stems removed �½ red onion�¼ cup capers�1 lemon, zest & juice�1 tbsp olive oil�Salt & pepper to taste

Black Rice�2 cups Lundberg Organic Short Grain brown rice
3 1/2 cups water or stock

Cook 2 cups of Lundberg Organic Short Grain Black Rice with 3½ cups water or stock according to package instructions.
While that cooks, whisk together 2 tbsp honey and ¼ cup olive oil and brush all your salmon. Sprinkle generously with everything bagel seasoning, making sure to coat the sides too.
Spray an air fryer basket with cooking oil and cook the salmon at 350°F for 5–8 minutes, or until cooked through and the seasoning is crispy. Keep an eye on it so the seasoning doesn’t burn.
Meanwhile, roughly chop 1 large bunch of parsley (remove any twiggy stems) and toss with thinly sliced red onion, capers, the lemon zest & juice, 1 tbsp olive oil, and salt and pepper to taste.
Serve the salmon and salad over the black rice.

Thai Inspired Tofu Crumbles

So I’m not typically a tofu guy but I’ve made it my current life’s mission to see if I can develop some recipes I actually dig. These tofu crumbles are a game changer.

You start with super firm/high protein tofu, bake it off to get a crispy texture, then simmer it in a sauce for the most incredible ground tofu you’ll ever have.

Details for the tofu crumbles are below and you can find the ingredients for the Thai tofu crumbles below as well.

Tofu Crumbles:

2 16oz packages of super firm/high protein tofu�Cooking spray as needed

Crumble one block of the tofu and grate the other half using a cheese grater.

Line a baking sheet with parchment paper, spray with cooking oil to cover, then spread your tofu out in an even layer.

Convection bake at 400° for about 20 minutes or until golden in color, removing the pan and stirring the tofu halfway through to cook evenly. You can also bake them without convection but it will take about 10 minutes longer.

Use this tofu in place of ground meat in your favorite recipes, although I like to add stock to the recipe to simmer the tofu for a better texture. Allow the tofu to cool and freeze in ziplock bags.

Thai Tofu Sauce:
6 minced garlic cloves
2-3 minced shallots
3-8 tbsp huy Fong chili garlic sauce (I know this is a crazy range haha but I like my stuff SPICY. It also looks more delicious the more you add)
2 tbsp oyster sauce
2 tbsp brown sugar
1 1/2 cups chicken or veggie stock
Juice from 1/2 lime, zest from whole lime�2 tbsp soy sauce
1/2 tbsp dark soy sauce (optional, for color)
TONS of Thai or Italian basil, like TONS OF IT
1 tbsp fish sauce (optional if vegan)
1 tsp corn starch mixed with 1 tsp water (to make a thickening slurry, optional)

Maple Tahini Quinoa Bowls
