I figured I’d give everyone an update while I get ready for the day. We haven’t made nearly as much progress on the property as we’d hoped, but we’re making plans to have several large trees removed. Hopefully that’s the next big step that gets this project moving again!

I asked ChatGPT to help me figure out dinner using ingredients I already had, and it suggested this meatloaf. It was a huge hit—even my kids ate it! 🍽️

Easy Homemade Meatloaf

Ingredients

* 1 lb ground beef/pork mixture
* 1 egg
* ½ cup breadcrumbs
* ¼ cup milk
* 1 tbsp dried minced onion
* 1 tsp garlic powder
* 1 tbsp Worcestershire sauce
* 1 tsp Italian seasoning
* ½ tsp salt
* ½ tsp black pepper

Optional Glaze

* ¼ cup ketchup
* 1 tbsp brown sugar
* 1 tsp yellow mustard

Directions

1. Preheat your oven to 350°F.
2. In a large bowl, combine the ground beef/pork mixture, egg, breadcrumbs, milk, dried minced onion, garlic powder, Worcestershire sauce, Italian seasoning, salt, and pepper.
3. Mix everything together just until combined. Avoid overmixing to keep the meatloaf tender.
4. Shape the mixture into a loaf and place it in a loaf pan or on a lined baking sheet.
5. If using the glaze, mix the ketchup, brown sugar, and mustard together and spread it evenly over the top of the meatloaf.
6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F.
7. Let the meatloaf rest for 10 minutes before slicing and serving.
