Fried Fish with Yellow Vegetable Rice & Creamy Coleslaw
I. Crispy Whole Fried Fish
Ingredients:
1 whole Tilapia or Red Snaker (about 1.5 - 2 lbs), scaled, gutted, and cleaned
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika (smoked or regular)
1/2 tsp cayenne pepper (optional, for heat)
1/2 tsp dried thyme or oregano
1/4 cup all-purpose flour (optional, for extra crispiness)
1/2 cup vegetable oil or canola oil for frying
Lemon wedges for serving
1. Crispy Whole Fried Fish
Prepare Fish: Clean, pat dry, and make 2-3 deep scores on both sides of the fish.
Season: Rub the fish generously with a mix of salt, pepper, garlic powder, onion powder, paprika, cayenne (optional), and thyme/oregano. Optionally, dust lightly with flour.
Fry: Heat oil in a skillet. Fry the fish for 7-10 minutes per side until golden brown, crispy, and cooked through.
Drain & Serve: Remove, drain on paper towels, and serve immediately with lemon.
2.Yellow Vegetable Rice
Rinse Rice: Rinse rice until water runs clear.
SautΓ© Aromatics: In a saucepan, sautΓ© diced onion, then minced garlic.
Add Spices & Rice: Stir in turmeric, curry (optional), salt, and the rinsed rice.
Cook Rice: Add broth, bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes.
Add Veggies: Stir in frozen mixed vegetables partway through cooking.
Rest & Fluff: Let rice rest, covered, off the heat, then fluff with a fork before serving.
3.Creamy Coleslaw
Prepare Veggies: Combine shredded cabbage and carrots in a bowl.
Make Dressing: Whisk together mayonnaise, apple cider vinegar, sugar, salt, black pepper, and celery seeds (optional).
Combine & Chill: Pour dressing over vegetables, toss well, then cover and refrigerate for at least 30 minutes before serving.
