Happy Thanksgiving! 💛

Today, we pause and look back at all the ways God has carried us, sustained us, and poured His grace into our lives, sometimes in ways we didn’t even recognize at the moment.

As we gather with family and friends, may our hearts overflow with gratitude for the goodness of the Lord. Every blessing, every provision, every moment of strength came from His hand.

“Oh, give thanks to the Lord, for He is good! For His mercy endures forever.” — Psalm 106:1 (NKJV)

Join me in today’s cozy Thanksgiving episode as I try my Schnitzer Manus grain mill for the very first time, mill my own whole wheat berries, and make three simple, no-knead pies from scratch — Peach Mango, Cranberry, and Pumpkin.

With Thanksgiving just around the corner, my heart has been reflecting deeply on gratitude not just for the big blessings, but also for the quiet, ordinary moments where God shows His goodness. Milling wheat by hand may be slow and challenging, but it reminded me to slow down, appreciate the process, and truly give thanks for the resources God has already placed in our lives.

Creamy Pumpkin Soup (Whole Roasted Pumpkin Bowl)

Ingredients
- 1 whole small pumpkin (8–10 lbs), top removed and seeds scooped out
- Olive oil
- Salt & pepper
- ½ block tofu, cubed
- Soy sauce
- Coconut aminos
- 1 onion, diced
- 3–4 garlic cloves, minced
- 1 bell pepper, diced
- 1–2 carrots, diced
- 2 celery stalks, diced
- Chili flakes (optional)
- Water or vegetable broth
- 1 can coconut milk
- Nutmeg (to taste)
- Cinnamon (to taste)
- 1 lime (for squeezing at the end)
- Sesame seeds, for garnish
- Fresh thyme, for garnish
- Fresh rosemary, for garnish

Instructions
I. Roast the Pumpkin (Whole)
1. Preheat oven to 400°F (200°C).
2. Slice off the top “lid” of the pumpkin and scoop out seeds/strings.
3. Brush the inside and outside with olive oil and season with salt & pepper.
4. Place the pumpkin (with lid on) on a baking sheet and roast for 60–90 minutes, until the flesh is soft but the pumpkin still holds its shape.
5. Scoop out some pumpkin meat, leaving enough for the pumpkin to remain sturdy.
6. Set aside the scooped pumpkin.
II. Fry the Tofu
1. Heat a little oil in a pan.
2. Add tofu cubes.
3. Splash with soy sauce + coconut aminos.
4. Fry until golden, crispy, and caramelized.
5. Set aside.
III. Build the Soup Base
1. In a pot, sauté onion, garlic, and bell pepper until fragrant.
2. Add carrots and celery.
3. Season with salt, pepper, and chili flakes (optional).
4. Cook for 5–7 minutes until vegetables soften slightly.

IV. Add Pumpkin & Liquids
1. Add the mashed roasted pumpkin meat.
2. Pour enough water or broth to barely cover the veggies.
3. Add the coconut milk.
4. Add: nutmeg, cinnamon, a small splash of soy sauce, salt & pepper
5. Simmer for 15–20 minutes until carrots are soft.

V.Add the Tofu
Stir in the fried tofu during the last 5 minutes.

VI. Transfer to the Pumpkin & Garnish
1. Pour the finished soup into the roasted pumpkin bowl.
2. Squeeze fresh lime into the soup (start with ½ lime, add more to taste).
3. Garnish with: sesame seeds, fresh thyme, fresh rosemary
4. Place the pumpkin lid back on for presentation if desired.

Hello Beautiful Soul! 💛

In today’s video, I’m making some of my favorite snacks — ice cream, homemade “Snickers” bars, and potato chips, but with a cleaner and healthier twist!

While I cook and snack, I want to have a heart-to-heart about failure, what it really means, how God uses it to shape us, and why it’s not the end of your story. Sometimes our “burnt chips” moments in life teach us lessons success never could.

Whether you’ve failed recently in something big or small, I hope this video reminds you that your failures don’t define you, they refine you.

Because even in our weakest moments, God’s grace is still enough. (2 Corinthians 12:9)
