2. Add the eggs and just enough milk to the dry ingredients to make a sti batter. Add the potatoes and mix together until the batter is moist but not runny. If too stiff, add more milk.

Our Winter Issue Is on Its Way

The 68th issue of Edible San Diego went to press last week—and spoiler alert—it's a good one.



One of the most exciting parts of creating every issue is deciding on a cover. Narrowing down options is hard work. We sifted through dozens of pictures and mocked-up nine images before settling on one. Here are three cover options that didn't make it to final selection but they're too gorgeous not to share.

So, which pic did we pick? You'll have to wait until December to see it. For now, consider being one of the first to get your hands on a copy by becoming a subscriber if you aren't already.

Fun to see my collaboration with Michael Gardiner in print this week in issue 63 of Edible San Diego. Michael wrote the story on the disputed history of the Margarita, and I designed the illustrations and layout. And since Michael was driving, I was also “taster” of two of the claimants of the “original Margarita” when we visited Ensenada for interviews and photos 😉 Video:
I want to take a minute to honor my favorite local butcher! Every city & port I do my best to g*ther local intel for the highest quality & most earth-honest delicious provisions. When i find these talented individuals they become part of a dishes story! I call them my A team!

Have you ever heard of the french term merrior or terrior (pronounced MAYWAH and TAYWAH)? A good friend told me about these the other day. They are my new favorite words that describe everything I am so passionate about. In definition these terms are used to describe any food, meat, seafood, crop and how their flavor/aroma/smell/taste is influenced by their environment and all the people that are a part of its journey to your glass or plate.

For example when referring to meats, the flavors and tenderness of your steak comes down to what that cow ate, quality of life, stress levels, how it sacrificed, transportation, how it is broken down, stored, packaged- ALL THIS before it even reaches the hands of a chef or consumer.

Friends & Family I would like to introduce you to Bobby. He is a veteran turned butcher and freakin nails it! Ive tried and seen cuts of meat all over the world and his stuff is by far the BEST! For this large order he broke down and packaged everything beautifully. I can’t even imagine how long this takes to do by hand, but I am extremely grateful for this soul!

He is passionate about working with Creekstone Farms a single family farm and USDA certified ranch in Kansas that continues to respect their cattle even under pressure to cut corners from the rest of the industry. They still to this day are non-gmo certified, adhere to strict humane animal guidelines, and hand select each of their black angus cattle.

This to me is the perfect chain of exercised TERRIOR 👌🏻. Now you know the story of the plates that I serve from ranch to table! Even more important, you trust it! My goal in the culinary world is to re-connect people to their food! To love and respect nature and all the people that are passionate about this process and refuse to cut corners to save a few dollars.
