These aerated gruyère filled gougiers were a staple at restaurant Petit Crenn, back in the day when I was there. Got tons of practice busting these out for every guest who came to the restaurant. Major shoutout to all the mentors I’ve had along the way who molded me into the Chef I am today 🖤
