I'm a college freshman who's been looking for new meal ideas that can be done in a microwave and I stumbled across a really nice one that's gonna save me money and thought I would share. It's probably been done before but I haven't seen one for the microwave.
It's broccoli & mozzarella mac and cheese...
All I bought and used was a box of elbow noodles ($0.98), a bag of mozzarella/parm mix ($2.58), Italian seasoning ($1.00), a crown of broccoli ($1.40), and a quart of milk ($1.72). Compared to the Velveeta cups I've been buying every two weeks, it's much more preferable given how filling, better tasting, cheap, and longer lasting this recipe is. And of course, the broccoli and cheese can be changed to your liking so it could be even cheaper.
I put a 3/4 cup of noodles in a microwave safe bowl, then poured water in the bowl to just over the noodles. I microwaved for 8 minutes and stirred in intervals whenever the foam began to rise.
After that I poured about a 1/2 cup of milk into the bowl, sprinkled cheese on top (I eyeballed it based on how much I wanted), and also sprinkled a bit of the Italian seasoning on it. I mixed all of it and then put it in the microwave for 5 more minutes, again stirring in intervals.
The bowl is really hot at this point!! I pulled off fine pieces of broccoli from the crown and mixed them into the macaroni while it was still really hot.
It takes a minute to cool down but it's so good! It tastes like slow cooker macaroni and cheese in my opinion. =))
