Today I will share my recipe for sous vide eggs!

This yummy breakfast can be made in advance and reheated for a minute in the microwave for rushed mornings (which are a norm for me now π). They are excellent for commute because of the ease of jars and due to the cute squat nature of these jars, offer easy access with a fork. They can be made in the instant pot too, with an egg tray, if that's more your speed. But I prefer sous vide for these because the Panna Cotta texture is DIVINE.

It's a protein packed breakfast with fresh veggies and a tiny bit of salt to season. You can use this recipe with any filling. Bell peppers, gruyere, sesame, etc. The principle is the same.

1. Start by sauteing your veggies in the pan. I also added mushrooms and bacon. Don't over cook.
2. Spoon the yummy filling into canning / Mason jars. Season with spices.
3. Either whisk or blend eggs with a few sprinkles of salt and pepper. You can always add more later. Pour egg over the filling in jars. Don't fill past the neck. I used egg white in 2 of mine.
4. Top with herbs. I used fresh dill, chives, and cayenne pepper. I also dripped some truffle oil on the egg yellow bites and chili oil on the egg white bites.
5. Screw on lids. Use only fingertips to achieve a very loose seal. This allows air bubbles to escape while cooking.
6. Cook in sous vide for an hour.
7. When reheating: take off lid and microwave for 1 minute.
8. Enjoy!
