Here’s a classic Butter Chicken recipe for you:
Ingredients:
For the Chicken Marinade:
500g boneless chicken (cut into bite-sized pieces)
1 cup plain yogurt
2 tbsp lemon juice
1 tbsp ginger-garlic paste
2 tsp red chili powder
1 tsp turmeric powder
1 tsp garam masala powder
Salt to taste
For the Butter Chicken Sauce:
2 tbsp butter
2 tbsp vegetable oil
1 large onion (finely chopped)
2-3 garlic cloves (minced)
1-inch piece of ginger (grated)
3 large tomatoes (blended into a puree)
1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 cup heavy cream
2 tbsp cashew paste (blend 10 cashews with a little water to make a smooth paste)
1 tsp garam masala
1/2 tsp sugar (optional)
Salt to taste
Fresh coriander leaves (for garnish)
Instructions:
1. Marinate the Chicken:
In a bowl, combine all the marinade ingredients. Add the chicken pieces and mix well.
Cover and refrigerate for 2-4 hours or overnight for best results.
2. Cook the Chicken:
Heat a grill pan or skillet over medium heat.
Add a little oil and cook the marinated chicken pieces until golden and cooked through (about 5-7 minutes). Set aside.
3. Prepare the Sauce:
Heat butter and oil in a large pan over medium heat.
Add the onions and cook until golden brown. Stir in the garlic and ginger, cooking until fragrant.
Add the tomato puree and cook for 8-10 minutes until it thickens and the oil starts to separate.
Mix in the red chili powder, cumin, coriander, turmeric, and cashew paste. Stir well.
4. Finish the Dish:
Add the cooked chicken to the sauce and mix well.
Stir in the heavy cream, garam masala, and sugar (if using). Simmer for 5 minutes.
Adjust salt to taste.
5. Serve:
Garnish with fresh coriander leaves and a drizzle of cream. Serve hot with naan, rice, or paratha.
