π Keto Peach Ice Cream π¦
A creamy, refreshing low-carb peach ice cream thatβs perfect for summer. Sweet, scoopable, and full of real peach flavor β without the sugar overload.
Ingredients:
β’ 400g ripe peaches, peeled and sliced
β’ 1/3 cup keto-friendly sweetener
β’ 1 tbsp lemon juice
β’ 1 1/2 cups heavy whipping cream
β’ 1/2 cup unsweetened almond milk or h**p milk
β’ 1/3 cup powdered keto sweetener
β’ 4 large egg yolks
β’ 1/4 tsp salt
β’ 1/2 tsp xanthan gum or glucomannan powder
β’ 2 tbsp vodka, optional
β’ 1/2 tsp vanilla extract
Directions:
1. Add the sliced peaches to a bowl with sweetener and lemon juice. Let them sit for 30 minutes, then mash them well.
2. In a saucepan, warm the cream, almond milk, and powdered sweetener until lightly simmering.
3. In a separate bowl, whisk the egg yolks with salt. Slowly mix in some of the warm cream, then pour everything back into the saucepan.
4. Cook on low heat, stirring often, until the mixture thickens slightly.
5. Remove from heat and cool over an ice bath for about 10 minutes.
6. Stir in the mashed peaches and xanthan gum.
7. Refrigerate for at least 3 hours.
8. Add vodka and vanilla, then churn in an ice cream maker.
9. Freeze for 1β2 hours until firm enough to scoop.
